One pot chicken Alfredo is a rich, creamy, Italian-inspired dish that combines all the comforting tastes and textures you want in a cozy pasta dish. It’s a simplified version of my easy chicken Alfredo with pasta and the perfect weeknight meal to throw together because this one pot chicken Alfredo recipe is exactly that, made in one pot!
You dump everything in, including the uncooked pasta, and let the stove do the rest! What you get is tender chicken and pasta smothered in a creamy seasoned white sauce. We love it garnished with fresh parsley for a pop of color and flavor!

Tips & Variations
- If you prefer to use a light cream rather than a heavy cream you can. It just won’t be as rich, but still just as tasty.
- Using freshly grated Parmesan will help to avoid a gritty sauce. The shakers of pre-shredded Parmesan doesn’t usually melt as nicely.
- The pasta will absorb the liquids pretty quickly and as it sits, the sauce will thicken up. If you’re not ready to serve it right away, you may need to add an extra splash of cream to loosen it up.
- Add veggies if you like! Things like sun-dried tomatoes, spinach, broccoli, bell peppers, peas, etc.
- If you like bacon, toss in some cooked bacon at the end.
- Use any kind of pasta you prefer. Linguine, fettuccine, fusilli, penne, bow tie pasta, etc.
Ingredients Needed

- Butter: I use butter (and a bit of oil) to brown the chicken. It adds a great buttery flavor to the sauce.
- Chicken breast or thighs: Cut into 1-inch pieces.
- Seasoning: Ground coriander, Italian seasoning, salt, and pepper.
- Garlic: Adding finely chopped garlic adds a lovely garlicky flavor to the Alfredo sauce. Feel free to increase the amount as desired.
- Chicken broth: This is to help thin out the sauce and is the liquid the pasta needs to cook!
- Heavy cream: Adds richness and creaminess to the chicken Alfredo one pot recipe!
- Pasta: I like brown rice pasta, but any short or medium pasta will work.
- Parmesan cheese: I recommend shredding your own fresh Parmesan as it melts much better and tastes better than the store-bought shakers.
- Finely chopped parsley: For garnish.
How to Make this Delicious One Pot Chicken Alfredo Recipe

Step 1: Season the pieces of chicken on all sides with Italian seasoning, coriander, salt, and pepper.


Step 2: In a large pot brown the chicken on all sides. Add the garlic and cook for 1 minute until fragrant.

Step 3: Pour in the chicken broth and heavy cream. Use a wooden spoon to deglaze the bottom of the pot. The brown bits that are released will add tons of flavor.
Step 4: Pour in the uncooked pasta and stir to make sure everything is combined. Cover with a lid and simmer for 15-20 minutes.

Step 5: Once the pasta is tender and the chicken is cooked through, stir in the Parmesan cheese.

Step 6: Sprinkle with fresh parsley and serve!

Keep leftover chicken Alfredo in an airtight container in the fridge for up to 3 days. Reheat it on the stove over medium-low heat or in the microwave. Once again, you may need to add a splash of cream or broth to loosen it up.

One Pot Chicken Alfredo Pasta
Equipment
Ingredients
- 4 tablespoons butter
- 2 lb chicken thighs about 6-8 pieces, depends on the size - cut into 1 inch pieces
- ½ teaspoon coriander
- 2 teaspoon Italian seasoning or use 21 Salute Seasoning from Trader Joe's
- salt & pepper to taste
- 4 cloves garlic finely chopped
- 4 cups chicken broth I like to use homemade chicken broth
- 2 cups heavy whipping cream
- 12 oz pasta I like to use penne pasta, uncooked
- 2 cups Parmesan cheese freshly grated
- 2 tablespoon parsley finely chopped
Instructions
- Cut chicken into 1 inch pieces, and season with Italian seasoning, coriander, salt & pepper.
- Melt butter in a large skillet over medium heat and add chicken (if using a smaller skillet cook in batches). Brown stirring few times, about 3-5 min. After add garlic and saute for 1 min.
- Pour in chicken broth, heavy cream, and add uncooked pasta, bring it to a boil. Turn the heat to simmer, cover with a lid and simmer for 15-20 min, stirring few times.
- Stir in Parmesan cheese and give it a taste, adjust seasonging, if needed season with salt and pepper. Garnish with fresh parsley. Enjoy!
Notes
- Use boneless, skinless chicken breasts or thighs. Cut the chicken into bite-sized pieces to ensure quick and even cooking.
- Sauté the chicken in the pot first to develop flavor and create a nice sear on the outside. This step adds depth to the dish.
- Choose the right pasta. Fettuccine or penne are classic choices for Chicken Alfredo. Add the pasta directly to the pot without cooking it separately.
- Stir the pasta occasionally to prevent it from sticking to the bottom of the pot and ensure even cooking.
- Allow the dish to rest for a few minutes before serving to let the flavors meld together and ensure the pasta is perfectly coated in the creamy sauce.

Made this last night. It was delicious. It will become a cold weather meal for sure.
My 12-inch skillet was just barely big enough. I may use a stock pot for the full recipe next time. My husband always laughs as he cleans the cook top after I boil things over.
I will use 12 oz of penne, instead of 16 oz. next time. It was a bit too much pasta.
