Grease two 9 inch baking pans with coconut oil and line them with parchment paper, set aside.
In a mixing bowl combine flour, baking soda and salt, set aside.
Using hand mixer whisk butter with sugar until fluffy and light color.
Whisk in one egg at a time, whisking well after each egg.
Add vanilla. Whisk.
Whisk into the batter ½ of flour mixture then add ½ cup buttermilk, whisk until combined. Repeat with the rest of the flour and buttermilk, whisking until combined.
Fold in chopped pecans.
Divide the batter into two baking pans and bake for 35 - 40 minutes or until toothpick comes out clean when inserted in the center. Let it cool completely on a cooling rack. While cake is cooling lets make cake frosting.
To Make Frosting:
In a mixing bowl using hand mixer beat powdered sugar with butter until fluffy texture. Add cream cheese beat until combine.
To assemble the cake:
Place cake layer on a cake plate, spread half of the frosting over the top. Add second layer and spread the rest of the frosting over the top and sides. Garnish with pecans. Let rest for at least 2 hours or overnight. Enjoy!
