These juicy grilled chicken thighs are made with a simple marinade of avocado oil, lemon juice, garlic, and fresh cilantro and grilled to perfection on an outdoor grill or indoor grill pan.
2tablespoonscilantrofinely chopped or any of your favorite herb
salt & pepperto taste
Instructions
Firstly, grab a bowl and whisk together avocado oil, lemon juice, garlic, cilantro, salt and pepper. Add the chicken thighs and give the marinade a good mix. Let the chicken marinate for at least 4 hours, best overnight.
When you're ready to cook, preheat your grill to medium-high heat. Grill the chicken thighs for 6-8 minutes per side or until they're cooked all the way through. Once done, let the chicken rest for 5 minutes before slicing.
Finally, slice the chicken and get ready to enjoy! This recipe is perfect for a summer barbecue or a quick weeknight meal.
Notes
Remember to always add meat to a hot grill. This way, it'll give it a nice sear and char marks, and your chicken won't stick to the grill. Delicious, right?
When marinating, aim for at least 4 hours for the flavors to really infuse, but you can also prepare the marinade the night before and let the chicken marinate overnight (it is the best).
And one more thing – remember to discard the marinade. Don't use any mixture that's been in contact with raw chicken. Throw it away and focus on enjoying a delicious grilled chicken!
