Crispy Oven Baked Sweet Potato Fries with Dipping Sauce

Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper. Place the cut sweet potato fries into a large resealable bag or mixing bowl. Add the avocado oil and toss until every fry is evenly coated.
Season the Fries:

In a small bowl, stir together the mayonnaise, ketchup, paprika, and salt until smooth and creamy.Refrigerate the sauce until ready to serve.

Try to cut the sweet potatoes the same size — I know it’s tempting to rush, but it really helps them bake evenly and get nice and crispy.
A little cornstarch goes a long way! It’s the secret trick that makes the fries crisp up in the oven.
Spread the fries out on the baking sheet. If they’re too close, they steam instead of crisp… and we want crunchy, not soggy!
Don’t forget to flip them halfway — it makes such a difference.
If you like a little heat, add extra cayenne. If you don’t, you can leave it out completely.
