The Best Russian PIROSHKI (Stuffed Rolls with BRAISED Cabbage)

Ingredients for the Stuffed Rolls Dough:

  • 1 1/2 teaspoon dry active yeast
  • 1 tablespoon organic sugar if you want to make sweet piroshki add 2 tablespoon of sugar
  • 1 teaspoon Kosher salt
  • 1 organic egg
  • 3 tablespoon oil I use avocado or grapeseed oil, more for greasing baking sheet
  • 1 cup warm water
  • 4 cups unbleached all-purpose flour I like to use Bob's Red Mill Flour

Ingredients you will need to make Braised Cabbage:

  • 1 medium size green cabbage chopped
  • 1 carrot grated
  • 1 large onion chopped & sautéed
  • 3 tablespoons oil I use grapeseed oil
  • 6 oz. can organic tomato paste
  • 1 1/2 teaspoon Kosher salt
  • 1 teaspoon organic sugar
  • 1/2 teaspoon black pepper more if desired
  • 1/2 cup water

Piroshki Glaze:

  • 1 egg
  • 1 tablespoon water


How to make Dough for Russian Stuffed Rolls:

  • Into the bread machine add 1 1/2 teaspoon dry active yeast, 1 tablespoon sugar, 1 teaspoon salt, 1 egg, 3 tablespoon of oil and 1 cup of warm water. Give it a good whisk.
  • Now, add 4 cups of flour. Cover and set the bread machine on dough setting - 1 hour and 30 minutes.
  • While piroshki dough is kneading lets make braised cabbage.

How to Cook Braised Cabbage for Piroshki:

  • Using large skillet add chopped cabbage, grated carrot, chopped onion, 3 tablespoons of oil, tomato paste, Kosher salt, black pepper and water.
  • Stir and cook on medium heat for about 20 minutes, stirring few times, cool until warm temperature.

How to make Russian Piroshki aka Stuffed Rolls:

  • Line baking sheet with a parchment paper and grease with oil. Divide the dough into 12 pieces, using hands and a little bit of flour spread piroshki dough piece into a round circle, add warm braised cabbage filling about 1/3 cup, fold and squeeze the edges of the dough together, flip stuffed cabbage roll and place it on a baking sheet. Repeat until all piroshki is filled with braised cabbage.
  • In a small bowl whisk 1 egg and 1 tablespoon of water, brush stuffed rolls with egg mixture, let aside to rise for 30 minutes.
  • Preheat the oven to 350F. Brush the leftover egg mixture over piroshki, bake for 20-25 minutes. Enjoy the most delicious braised cabbage piroshki recipe!
