    Stuffed rolls filled with moist & flavorful  braised cabbage... Mmm mmmm I am drooling just thinking about them!

    Piroshki are one of the most popular foods in Russia & Ukraine.  I was born in Kazahstan & I remember making piroshki with my grandma & my mama!

    We would make piroshki with meat filling, braised cabbage, mashed potato & green onion with eggs. They all taste incredible but piroshki with braised cabbage are my favorite! Give this stuffed rolls recipe a try and you will know what I am talking about.

    How to make Piroshki Dough for Cabbage Piroshki:

    The Best Stuffed Cabbage Rolls Recipe (Baked Piroshki with Cabbage)

    Into the bread machine add dry active yeast, sugar, salt, 1 egg, oil and warm water.

    Give it a good whisk. Now, add flour. Cover and set the bread machine on dough setting - 1 hour and 30 minutes.

    While piroshki dough is kneading lets make braised cabbage.

    How to Cook Braised Cabbage for Piroshki:

    The Best Russian PIROSHKI (Stuffed Rolls with BRAISED Cabbage)

    Using large skillet add chopped cabbage, grated carrot, saute onion, oil, tomato paste, Kosher salt, black pepper and water.

    Stir and cook on medium heat for about 20 minutes, stirring few times, cool until warm temperature.

    How to make Piroshki aka Stuffed Rolls:

    Line baking sheet with a parchment paper and grease with oil.

    Divide the dough into 12 pieces, using hands and a little bit of flour spread piroshki dough piece into a round circle, add warm braised cabbage filling about ⅓ cup, fold and squeeze the edges of the dough together.

    Place piroshki (squeezed side down) on a baking sheet.

    Repeat until all piroshki are filled with braised cabbage.

    In a small bowl whisk egg and water, brush stuffed rolls with egg mixture, set aside to rise for 30 minutes.

    Preheat the oven to 350F. Brush one more time, the leftover egg mixture over piroshki, bake for 20-25 minutes.

    Ingredients
      

    Ingredients for the Stuffed Rolls Dough:

    • 1 ½ teaspoon dry active yeast
    • 1 tablespoon sugar if you want to make sweet piroshki add 2 tablespoon of sugar
    • 1 teaspoon Kosher salt
    • 1 egg
    • 3 tablespoon oil I use avocado or grapeseed oil, more for greasing baking sheet
    • 1 cup warm water
    • 4 cups unbleached all-purpose flour I like to use Bob's Red Mill Flour

    Ingredients you will need to make Braised Cabbage:

    • 1 green cabbage chopped
    • 1 carrot grated
    • 1 onion chopped & sautéed
    • 3 tablespoons oil I use grapeseed oil
    • 6 oz. tomato paste
    • 1 ½ teaspoon Kosher salt
    • 1 teaspoon sugar
    • ½ teaspoon black pepper more if desired
    • ½ cup water

    Piroshki Glaze:

    • 1 egg
    • 1 tablespoon water

    Instructions

      This sounds just awesome! But what to do if I don't have a bread machine? Thanks so very much for sharing!

        You can totally make your dough by hand in a bowl.

        First, whisk all of the ingredients except flour, then fold in flour. Cover the bowl and let it rest for 30 min in a warm place.

        After 30 minutes, knead the dough with hands, cover the bowl and let it rest for another 30 minutes.

        The dough should double in size when it is ready to be used to make stuffed rolls.
