    These bite-size cucumber and cream cheese sandwiches are a twist on your classic cucumber tea sandwiches and the perfect easy appetizer for all occasions!

    They’re an open-faced mini sandwich made with a slice of baguette, a layer of cream cheese spread, a slice of salty salami, then topped with crispy, crunchy cucumber and fresh dill for garnish.

    These are so easy to make and quick to come together, so if you’re looking for something super easy to put together for your holiday parties, game days, or just something to snack on, these cucumber tea sandwiches are for you!

    Tips for Cucumber Sandwich Recipe

    • For presentation, I highly recommend serving these cucumber cream cheese tea sandwiches on a wooden board.
    • If you can’t find a French baguette, you can swap it with something else! Try whole wheat crackers, Melba toast, mini pitas, mini naan bread, or a different kind of bread.
    • For a crispy bite, toast your baguette first.
    • To have these ready by the time your guests arrive, you can assemble them completely, cover them with plastic wrap, and keep them refrigerated until you’re ready to serve.
    • I wouldn’t make them too early, as they will get soggy when refrigerated with the cream cheese for too long.

    Ingredients Needed

    • French bread baguette: You can slice your own or buy them pre-sliced. If doing it yourself, I suggest using a serrated knife and trying to slice them all to an even thickness. It looks nicer on the platter!
    • Cream cheese spread: We love using boursin with shallot and chive, but you can use plain cream cheese, garlic and herb, or onion and chive.
    • Salami: Thinly sliced salami can be found at your local deli, or head to a European market for some kielbasa.
    • English cucumber: I prefer not to peel my cucumber, but you can remove the skin before slicing, if you prefer.
    • Fresh dill: For garnish.

    How to Make Cucumber Sandwiches

    Step 1: Lay your baguette slices on a clean cutting board or platter. Spread Boursin cheese on top of each one. You can use as much or as little as you’d like, but make sure you’re getting enough so that the bread isn’t too dry.

    Step 2: Place 1 or 2 slices of salami over the cream cheese and then top it with a slice of fresh cucumber.

    Step 3: Sprinkle some dill over the top for garnish. Enjoy!

    Can I make these without meat?

    Sure you can! If you prefer a vegetarian appetizer, feel free to leave the salami off. Or you can make some with and some without.

    Are these appetizers suitable to bring to a potluck?

    Absolutely. I wouldn’t necessarily assemble them too early, depending on when you’re serving them, but everything is easily portable. Since they’re so quick to make, you can bring all of your ingredients and supplies and make them on the spot.

    Can I double the recipe?

    If you’re serving a larger crowd for the holidays, easily double or triple the recipe to make as many as you need.

    Can I use a different type of deli meat?

    You can get creative and make these your own. Use what you have on hand or what you like to eat. Turkey slices, chicken, or ham all work well. You could even swap the deli meat for tuna or smoked salmon, similar to cucumber bites with salmon.

    Storage

    These tasty sandwiches are best enjoyed the day they’re made. However, if you have leftovers, store them in an airtight container in the fridge for up to 2 days. I wouldn’t serve them to guests, but I would certainly enjoy them for a snack or a light lunch with the family!

    Ingredients
      

    • 1 French Bread baguette sliced
    • 5.2 oz cream cheese spread we love using Boursin with shallot & chive
    • 6 oz. salami sliced, or salami from European store (kolbasa)
    • 1 english cucumber sliced
    • dill for garnish

    Instructions
     

    • To make cucumber sandwiches, first slice French bread into slices or buy one that is already has been sliced.
    • Next spread Boursin cheese spread over each slice of bread. Then place 1-2 Boar's Head salami slices over cheese spread. Follow by sliced cucumber.
    • Finally add dill over the top for garnish. Serve on a wooden cutting board or a large platter. Enjoy!

    Notes

    • For an extra crispy bite, toast your baguette slices before assembling.
    • To ensure everything is ready when your guests arrive, you can fully assemble the sandwiches, cover them with plastic wrap, and refrigerate until it's time to serve.
