Crunchy Cucumber Radish Salad Recipe

Here is one quick and easy salad recipe that we enjoyed having for dinner last week.  Made out of chopped radish, cucumber and parsley.  Dressed in extra virgin olive oil and lemon juice.

Ingredients
  

  • 1 1/2 cup radish finely chopped
  • 1 1/2 cup cucumber finely chopped
  • 1/2 cup parsley finely chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon extra vergin olive oil
  • salt and pepper to taste

Instructions
 

  • Combine cucumber, parsley and radish in a salad bowl.
  • Add lemon juice and olive oil.
  • Also add salt and pepper to taste.
  • Give it a mix and enjoy.

Notes

Feel free to use sour cream for dressing instead of zesty lemon juice and olive oil.

      Thank you Natalie! I am sure you can substitute by adding sliced tomatoes/grape tomatoes or avocado in your salad! My mom always added sour cream and it tastes good but , I can’t eat it because my stomach doesn’t really process fat. and I’ll end up with a severe stomach pain. It didn’t occur to me that I can use oil! Than you! I am really impressed that your little one is able to hold knife correctly and do such a good job in cutting! Amazing!
