I know roast turkey has been a Thanksgiving tradition for what seems like forever, but hear me out. What if we served a Thanksgiving steak instead?!
There is nothing better than a nice juicy steak with a beautiful char smothered in melted garlic butter. Whether it’s a ribeye baked in the oven, steak cooked on the stove, or a steak grilled on the outdoor barbecue, steaks for the holidays are definitely a tradition worth starting!

- Bring the steak out of the fridge early enough so that it is at room temperature by the time it hits the grill. If it’s cold, the sear just won’t be the same, and the meat may stick.
- Make sure the grill is hot! This is how you get the char. Also, searing the outside of the steak helps to lock in the juices so it stays nice and tender.
- Let the meat rest before slicing. If you slice into it too soon, the juices run out leaving behind a dry steak.
- Double or triple the recipe for a larger crowd. If some of your guests want their steak cooked longer than others, you can put some of it back on the grill once you’ve sliced a portion.
Ingredients for Grilled Ribeye Steak
- Ribeye steaks: PIck up a couple of 2-inch thick ribeye steaks. This cut is juicy, tender, and full of flavor.
- Steak seasoning: I have a homemade Montreal Steak Seasoning blend I use, but you use whatever seasoning is your favorite.
- Avocado spray: Sprayed on the grill to prevent sticking.
- Garlic butter: Salted butter softened to room temperature, minced garlic, and fresh thyme, rosemary, and parsley. Mine all the herbs. Salt and pepper to taste.
How to Cook Ribeye Steak on the Grill
Step 1: Preheat an outdoor grill to the highest heat. This is so that as soon as the meat hits the grill, it’ll sizzle and form an immediate crust on the outside to look in the moisture.
Step 2: Grease the grill with avocado spray (you can also use olive oil or avocado oil if you don’t have spray).
Step 3: Generously season the steaks with the steak seasoning, making sure to rub it all over as evenly as possible.
Step 4: Sear the steaks on the grill for 3-4 minutes on each side. Let the flames char the meat while the inside cooks to your liking. I like it to reach an internal temperature of 130F.
Step 5: Remove the steaks from the grill and place them on a cutting board or plate. Let them rest for 5-10 minutes to allow the juices to settle.
Step 6: In a small bowl, mix the butter, garlic, herbs, salt, and pepper until well combined. Spoon 1 or 2 tablespoons of the compound butter onto each steak before slicing and serving, and watch it melt right into the already juicy steak.
Step 7: Use a steak knife to slice the steak and serve alongside your favorite holiday side dishes!
How Long to Cook Ribeye On Grill
Ribeye grill time depends on how thick the steaks are, what temperature your grill is, and how you like yours done.
No matter how you like yours done, take it off the grill 5 degrees under what your desired temperature is. As it sits, it will continue to cook for a few minutes. This ensures you won’t overcook it.
At high heat, I like mine done for 3-5 minutes per side. If I was using medium heat, I’d keep them on for about 5-7 minutes per side.
Use a meat thermometer to test.
For a rare steak, it should read 125F, medium-rare 135F, medium 145F, medium-well 155F and well 160F.
What Goes Good With Ribeye?
The best part about cooking a steak for the holidays is that it still pairs well with all of your favorite Thanksgiving side dishes!
Serve it with Instant Pot mashed potatoes or a loaded mashed potato casserole and fresh green beans with bacon and shallots or the best Caesar salad. You could also put out a turkey cheese platter or Christmas Tree Cheese Platter for an appetizer!

Ribeye is flavorful on its own due to its marbling. Marinating is not necessary!
