Prepare the Veggies: Start by washing the cucumber and radishes. Thinly slice the cucumber and radishes using a sharp knife or a mandoline. Dice the red onion as fine as possible.
Combine the Salad: In a large bowl, add the sliced cucumber, radishes, red onion, and fresh herbs.
Add the Dressing: Into the same bowl add olive oil, lemon juice, salt, and pepper to taste.
Toss and Chill: Gently mix everything together until the vegetables are well coated with the dressing. Let the salad sit in the fridge for about 15-20 minutes to allow the flavors to meld (optional).
Serve: Toss the salad again before serving. Enjoy this crunchy, vibrant salad as a side dish or a light, refreshing main!

When you're washing your veggies don't forget to dry them too! A little excess water can pool at the bottom of your bowl, and we definitely want to avoid that.
For perfectly even slices a mandoline is your best friend. If you don’t have one, no worries! A sharp knife will work just fine.
Letting your salad hang out in the dressing for a bit is a great idea! It helps the lemon juice gently soften the veggies and lets all those delicious flavors soak in.
For something creamy, swap out the lemon juice and olive oil for sour cream. You can mix it with lemon juice and a bit of minced garlic if you'd like a little zing. Greek yogurt is another tasty option!
