Cucumber Radish Salad - One of my favorite summer salad recipes, this salad is crunchy, vibrant, and zesty and made with only a handful of fresh ingredients!

If you love a crunchy salad, this radish and cucumber salad has a ton! It’s fresh, vibrant, and totally crunchy made with zesty radishes, cool crisp cucumbers, red onions, and dill tossed in a light lemon dressing.
Salads like sliced cucumber salad, cherry tomato salad, cucumber tomato salad and this cucumber radish salad have so much flavor despite using just one or two veggies. They showcase each ingredient beautifully and they’re so easy to make.
If you have an abundance of garden cucumbers or radishes this year, this cucumber and radish salad with dill is a great way to use them up in this salad. It works as a light lunch, or a side dish for any main dish.

Ingredients for Cucumber Radish Dill Salad
- Large cucumber: Thinly sliced. If using garden cucumber, peel the skin as it’s usually thick and bitter.
- Radishes: You’ll need about 8-10 radishes, thinly sliced. If you prefer more radishes go ahead and use them. Don’t forget to scrub them clean!
- Red onion: Finely diced, red onions add a nice mild pungent flavor.
- Fresh dill: A pop of fresh herbs
- Dressing: Olive oil, lemon juice, salt, and pepper.

How to Make Cucumber Radish Salad
Step 1: Wash and slice the vegetables. To get even, thin slices, use a mandoline. If you have a veggie chopper you can use that to dice the onions if you like.
Step 2: Add the prepared cucumbers, radishes, onions, and dill into a large bowl.
Step 3: Drizzle in the olive oil and lemon juice, then sprinkle with salt and pepper. Toss until everything is well coated.
Step 4: Let the salad sit in the fridge for about 15-20 minutes to give the flavors a chance to meld.
Step 5: Toss the salad again before serving. Enjoy!
Expert Tips
- When you wash your vegetables, make sure to dry them too! You don’t want too much excess water pooling in the bottom of your bowl.
- Use a mandoline to get even slices, otherwise use a sharp knife.
- Letting the salad sit in the dressing gives the lemon juice a chance to soften the veggies just a bit while allowing them to absorb the flavors.
- You can also use my apple cider vinegar dressing if you prefer.
- For a creamy dressing, use sour cream instead of lemon juice and olive oil. You could also use it with lemon juice and add a bit of minced garlic. Greek yogurt works too.
- Or use the creamy garlic dressing I use in my tomato salad with cheese.

Cucumber Radish Salad

- 1 English cucumber thinly sliced
- 1 cup radish thinly sliced, about 8-10 radishes
- ½ cup red onion finely diced
- ¼ cup dill finely chopped
- 1 tablespoon lemon juice freshly squeezed
- 2 tablespoons extra vergin olive oil
- sea salt and pepper to taste
Instructions
- Prepare the Veggies: Start by washing the cucumber and radishes. Thinly slice the cucumber and radishes using a sharp knife or a mandoline. Dice the red onion as fine as possible.
- Combine the Salad: In a large bowl, add the sliced cucumber, radishes, red onion, and fresh herbs.
- Add the Dressing: Into the same bowl add olive oil, lemon juice, salt, and pepper to taste.

My mom always added sour cream and it tastes good but , I can't eat it because my stomach doesn't really process fat. and I'll end up with a severe stomach pain. It didn't occur to me that I can use oil! Than you! I am really impressed that your little one is able to hold knife correctly and do such a good job in cutting! Amazing!
