This must try Italian Salad Recipe is just beyond delicious! It is one of the recipes I created for Fred Meyer’s #TasteofItaly event that will be going on in September, 2016!
This salad recipe is full of fresh ingredients like organic romaine lettuce, juicy cherry tomatoes, green olives, peperoncinis, red onion and Parmesan cheese that you will find at any local Fred Meyer Stores.
The salad dressing on the other hand takes this Italian salad to the next level. Made of Colavita Extra Virgin Olive Oil (Imported from Italy, part of Taste of Italy products), red wine vinegar, garlic, mayo, and dried oregano.

Ingredients you will need for Italian Salad Dressing:

- 1 garlic clove, grated into paste
- 2 tablespoons mayonnaise
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 cup extra-virgin olive oil
- salt and freshly ground pepper
Ingredients you will need for Italian Salad:
- 1 large organic romaine heart, chopped
- 1/2 small red onion, thinly sliced
- 1/2 cup cherry tomatoes, cut in half
- 1/4 cup pitted green olives
- 8 peperoncini
- 2 ounces Parmesan cheese, shaved (1 cup)

How to make Italian Dressing:
In a large bowl combine garlic, mayo, red wine vinegar, oregano, olive oil, salt and pepper. Whisk until combined.
Assembling Italian Salad:
There are 2 ways you can assemble this salad: Toss in chopped romaine, red onion, cherry tomatoes, green olives and peperoncini. Drizzle dressing and woalaaa! Or lay individual ingredient on the plate, drizzle Italian Dressing and garnish with shaved Parmesan cheese. Enjoy:)
