Why This Recipe Works
I make these Hot Beef Sandwiches whenever I want something warm, cheesy, and easy to pull together. Here’s what makes them special:
- Creamy and Savory Filling: The combination of ground beef, cream of mushroom soup, and melted cheddar makes the filling rich and flavorful. It’s that same creamy comfort you’ll find in my Cheesy Ground Beef Sandwich.
- Bold, Seasoned Flavor: Montreal Steak Spice and Worcestershire sauce give the beef a deep, savory taste that feels like it’s been simmering all day. Every bite is packed with flavor.
- Perfectly Melty Cheese: The cheese melts right into the beef mixture, making it smooth and gooey without being heavy. It’s the kind of texture that makes this sandwich irresistible.
- Family-Friendly and Quick: Everything cooks in one skillet, so cleanup is easy and dinner’s ready fast. It’s a great recipe for busy nights when you still want something homemade.
- Make-Ahead Friendly: The beef filling keeps well in the fridge or freezer, so you can prep it ahead and assemble the sandwiches later. I use the same trick when making my Roast Beef Sandwich Recipe for easy meal planning.

Ingredients
- Hoagie Rolls – Soft, sturdy rolls that hold the creamy beef filling without falling apart. You can also use sandwich buns or French rolls if that’s what you have on hand.
- Ground Beef – The main protein in this recipe. I like using lean ground beef so the filling stays flavorful but not greasy.
- Onion – Finely chopped onion adds sweetness and depth to the beef mixture as it cooks.
- Montreal Steak Spice – A bold seasoning blend that gives the beef a savory, slightly smoky flavor. If you don’t have it, use a mix of salt, pepper, garlic powder, and paprika.
- Green Bell Pepper – Adds a mild crunch and freshness that balances the creamy sauce. Red or yellow peppers can be used for a sweeter flavor.
- Garlic – Brings a subtle, aromatic flavor that ties the filling together.
- Cream of Mushroom Soup – Creates a rich, creamy base for the beef mixture. You can use homemade or a 10.5 oz can of store-bought soup.
- Worcestershire Sauce – Adds a tangy, umami flavor that deepens the overall taste of the filling.
- Cheddar Cheese – Melts into the beef mixture for a creamy, cheesy texture. Use mild or sharp cheddar, or swap with mozzarella or provolone for a different flavor.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Protein Options: I usually make this with ground beef, but ground turkey, chicken, or even sausage work great too. You can also use shredded roast beef for a heartier version.
- Cheese Choices: Cheddar melts beautifully, but mozzarella, provolone, or pepper jack add their own flavor. I like to mix two kinds for extra creaminess.
- Veggie Add-Ins: Try adding mushrooms, diced tomatoes, or spinach for more texture and color. You can also toss in jalapeños if you like a little heat.

What to Serve with Hot Beef Sandwich
Soups and Cozy Sides
- These hot beef sandwiches are creamy, cheesy, and filling, so soup is an easy match. Serve them with Cream of Mushroom Soup or Panera Broccoli Cheese Soup for a cozy family dinner.
- They would also be great with Quick and Easy Chicken Noodle Soup when you want a simple soup-and-sandwich meal.
Potatoes and Fries
- For a classic sandwich side, serve these with Air Fryer French Fries or Crispy Potato Wedges. Both are perfect with the saucy beef filling.
- Mashed Potatoes & Macaroni would also work for a heartier comfort food dinner.
Fresh Salads
- A crisp salad helps balance the rich, cheesy sandwich. Caesar Salad or Greek Salad would both add freshness without much extra work.
- For something lighter, try Cucumber Tomato Salad or Cabbage Salad. Both keep the meal simple and family-friendly.
Easy Extras
- Top the sandwiches with Quick Pickled Red Onions for crunch and tang. Pickled jalapeños, extra cheese, or fresh parsley are also great if you want more flavor.
- For a casual dinner, serve them with chips, coleslaw, pickles, or raw veggies. Add Easy Vanilla Cake Pops for a fun dessert the kids will love.

📖 Recipe

Hot Beef Sandwich
Ingredients
- 6 hoagie rolls
- 2 tablespoons avocado oil or any oil of your choice
- 1 lb ground beef
- 1 small onion finely chopped
- 2 teaspoons Mccormick's Montreal Steak Spice
- 1 green bell pepper finely chopped
- 1 clove garlic minced
- 1 ¼ cup cream of mushroom soup or 10.5 oz. can of store bought cream of mushroom soup
- 2 teaspoons Worcestershire sauce
- salt to taste
- black pepper to taste
- 1-2 cups cheddar cheese grated
Instructions
- To make Beef Sandwiches, first preheat 2 tablespoons of avocado oil inside the skillet. Then, add 1 lb ground beef and 1 small chopped onion, and saute for 7-10 minutes over medium-high heat. Sprinkle 2 teaspoons of Montreal Steak Spice.
- Next, add 1 chopped bell pepper and 1 minced garlic clove to skillet. Cook for 3 minutes. Next, add 1 ¼ cup of cream of mushroom soup (I used homemade cream of mushroom soup) and 2 teaspoons of Worcestershire sauce. Season with salt and pepper. Stir and cook for 5 minutes.
- Finally, turn off the heat and stir in 1 ½ cups of cheddar cheese. Then, add cheesy beef mixture to the hoagie bread rolls. Serve warm with Cream of Mushroom Soup. Enjoy!

Notes
- Brown the beef well before adding the remaining ingredients. Developing a little color adds extra depth of flavor to the filling.
- Drain excess grease if needed. Removing excess fat keeps the filling creamy instead of oily.
- Use lean ground beef if preferred. It naturally produces less grease and creates a lighter sandwich.
- Don't overcook the bell pepper. Leaving it slightly tender adds great texture to every bite.
- Stir the cheese in after removing the pan from the heat. This helps it melt smoothly without becoming oily or stringy.
- Add a splash of milk if the filling seems too thick. A few tablespoons will make it extra creamy and easier to spoon into the rolls.
- Taste before serving. The Montreal Steak Spice adds seasoning, so adjust the salt and pepper as needed.
- Add sriracha for extra heat. A spoonful mixed into the filling gives the sandwiches a delicious spicy kick.
- Toast the hoagie rolls if desired. A lightly crisp exterior helps hold the filling and adds even more texture.
- Serve immediately while hot. The melted cheese and creamy filling are at their best fresh from the skillet.

Sarah
Hi, can i use milk instead of cream of mushroom?
Love Keil
Hi, Sarah! That's a great question! I haven’t tried it with milk, but it might work in a pinch! 😊 The sauce will be a bit thinner, so you may want to simmer it a little longer or add a touch of cornstarch to help it thicken.
Amanda
We absolutely love this recipe! Will make again but with different cheese, pepper jack, Swiss, provolon!

I'm so glad to hear you loved the recipe, Amanda! 🧡 Switching up the cheese sounds like a delicious idea! 😊🧀
