Pecan Pomegranate Kale Salad

Healthy Pomegranate Kale Salad Recipe – a beautiful winter salad that is light on your stomach.

  • 1 Organic kale bunch washed and chopped into small pieces
  • 1/2 of small red onion sliced
  • 1 cup pomegranate seeds
  • 1/2 cup pecans toasted
  • 1/3 cup extra virgin olive oil
  • 1/4 cup apple-cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons raw honey
  • salt and pepper to taste
  • 2 oz.soft goat cheese crumbled
  • 1/2 teaspoon chia seeds


  • In a mixing bowl, combine 1 chopped bunch of kale, 1/2 cup of sliced small red onion, 1 cup pomegranate seeds, and 1/2 cup toasted pecans.
  • In different bowl combine 1/3 cup extra virgin olive oil, 1/4 cup apple-cider vinegar, 2 tablespoons Dijon mustard, 2 tablespoons raw honey, salt and pepper to taste. Whisk until everything is combined.
  • Pour over the salad and toss with 2 forks to coat. Garnish with 2 oz. crumbled goat cheese and 1/2 teaspoon of chia seeds. Enjoy!
