    Healthy Pomegranate Kale Salad Recipe -  a beautiful winter salad that is light on YOUR tummy.  A Kale Salad that is nutty, crunchy and made of everything nice, like homemade honey dressing and good-for-YOU chia seeds.

    This pomegranate salad recipe is perfect side dish to make for Thanksgiving, Christmas or any other winter holidays.  As a matter of fact YOU can make it any time of the year.  Feel free to adjust the ingredients to YOUR own liking, and if YOU do please let me know in the comments below, how it turned out.  I would love to hear from YOU!

    Healthy Pomegranate Kale Salad Recipe from Munchkintime.com

    Ingredients YOU will need to make Healthy Pomegranate Kale Salad:

    • 1 Organic kale bunch, washed and chopped into small pieces
    • ½ of small red onion, sliced
    • 1 cup pomegranate seeds
    • ½ cup pecans, toasted
    • ⅓ cup extra virgin olive oil
    • ¼ cup apple-cider vinegar
    • 2 tablespoons Dijon mustard
    • 2 tablespoons raw honey
    • salt and pepper to taste
    • 2 oz.soft goat cheese, crumbled
    • ½ teaspoon chia seeds

    Step One

    In a mixing bowl, combine 1 chopped bunch of kale, ½ cup of sliced small red onion, 1 cup pomegranate seeds, and ½ cup toasted pecans.

    Step Two

    In different bowl combine ⅓ cup extra virgin olive oil, ¼ cup apple-cider vinegar, 2 tablespoons Dijon mustard, 2 tablespoons raw honey, salt and pepper to taste. Whisk until everything is combined.

    Step Three

    Finally, pour over the salad and toss with 2 forks to coat. Garnish with 2 oz. crumbled goat cheese and ½ teaspoon of chia seeds. Enjoy!

    • 1 bunch kale washed and chopped into small pieces

      Thank you for influencing me to use chia seeds. I did not know that it has a lot of health benefits but after trying your banana bread recipe, we had been trying to incorporate it into our meals.

      Love the combo of pecans and kale. Offsets the bitter of the kale with a sweeter nut. Great idea
