Creamy Turkey Breast and Potato Casserole

Super cheesy potato casserole in creamy white sauce.

  • 4 tablespoons butter plus more for greasing
  • 1/2 onion diced
  • 1/3 cup flour
  • 2 - 3 cups milk I use 3 cups of milk
  • 1 cup heavy whipping cream
  • 2 lb potato peeled and sliced
  • 2-3 cups cooked turkey breast you can also use chicken breast or ham
  • 2 cups colby Jack cheese grated
  • salt and pepper to taste

  • Preheat the oven to 400F. Melt butter in the large skillet on a medium heat. Add onion, saute it until golden color about 4 minutes. Add flour and whisk it with a wooden spoon, cook for 2 minutes or until it turns golden brown color.
  • Slowly pour in milk and heavy whipping cream, whisk contentiously for 3-4 minutes. Add salt and pepper, reduce the heat to low.
  • Slice potato the thinner the better. Using butter grease 2 quart baking pan. Add 1/2 of the sliced potato, turkey breast, cheese followed by 1/2 of the sauce mixture. Repeat again with the rest of the ingredients.
  • Cover with foil and bake for 40 minutes, then remove foil and bake it for another 20 minutes or until the potato are cooked. Garnish with greens and ENJOY!
