Clean eating can actually taste really good, when you make this Roasted Mahi Mahi with Corn Beans & Cherry Tomatoes. Healthy, easy and super delicious!
In a mixing bowl combine beans, corn, tomatoes, olive oil, salt and pepper. Give it a nice mix.
Spread vegetables on a baking sheet. Place mahi mahi on top, drizzle some olive oil and season with salt and pepper.
Bake for about 20 minutes or until fish is cooked.
Garnish with greens. Serve with rice or mashed potato. Enjoy!
