Tuna Spinach Artichoke Pasta Salad Recipe

The artichoke gives this nice soar taste that I absolutely love and juicy tomatoes just explode in your mouth. I promise this pasta salad will have your mouth watering!

Ingredients

  • 10 oz. pasta
  • 10 oz. albacore tuna in water drained
  • 4 cups fresh baby spinach cut into small pieces if desired
  • 14 oz. artichoke hearts drained
  • 2 cups cherry tomatoes sliced in half
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh dill chopped
  • 1 lemon juiced
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Cook pasta by following the instructions on the box. Before draining pasta reserve 1/4 cup of pasta water.
  • Place pasta into a large bowl, add the rest of the ingredients plus 1/4 cup pasta water, Mix using 2 forks, serve warm or cold. This pasta salad will keep in the fridge for up to 2 days. Enjoy!
