In a mixing bowl combine cabbage, grated carrot, 1 egg and seasonings. Mix.
Preheat skillet over medium/low heat with a splash of avocado oil (about 1 tablespoon). Take about 1 cup of cabbage mixture and add it to the skillet forming a nest with a spoon into the nest add egg. Season with salt and pepper, to taste.
Cook covered for few minutes or until golden color, flip on the other side and cook for another few minutes. Repeat with the rest of the cabbage mixture. Serve while warm with breakfast sausages. Enjoy!

If you prefer a harder yolk, just keep the egg nests cooking for a little longer. And if you like a bit of seasoning, adding some salt and pepper can really enhance the flavor of the eggs.
You can also try sprinkling some red pepper flakes for a bit of heat, or some parmesan cheese for a touch of saltiness.
