Let's start by preheating your oven to 350°F and greasing a 9 × 13-inch baking dish with some butter. In a mixing bowl, combine flour, baking soda, cream of tartar, and a pinch of salt.
Using your stand mixer, cream together softened butter and ¾ cup of sugar until it's nice and fluffy. Then, beat in an egg until everything is mixed well. Now, gradually add the flour mixture and buttermilk, switching between the two and making sure to mix well after each addition.
Next, arrange those juicy peaches in the prepared baking dish and sprinkle them with the remaining ¼ cup of sugar. Spoon the batter over the peaches, making sure it's nice and even. Pop the dish in the oven and bake for 40-50 minutes, or until the top is a beautiful golden brown and a toothpick inserted into the batter comes out clean.
Once it's done baking, let the peach cobbler cool for about 5-10 minutes before digging in. Serve warm cobbler with a scoop of vanilla ice cream and a sprinkle of granola or chopped pecans. Enjoy!
Notes
You can use canned peaches although fresh is always the best.
Add vanilla to the cake or a dash of cinnamon for extra flavor.
A sprinkle of cinnamon sugar on the peaches is also a nice twist.
Make this recipe using a different kind of fresh fruit next time. Use sliced pears, apples, pineapples, mangoes, strawberries, raspberries, or whatever fruit you love.
