When it comes to fresh peach dessert recipes, along with my peach pie bars, this cake peach cobbler is one of my favorites! It’s a twist on a classic, because unlike my easy apple cobbler that uses biscuit dough, this is a cake batter peach cobbler recipe, which means it’s topped with cake!
Sweet, juicy peaches are topped with a moist, tender cake baked until golden on top. When served with a scoop of vanilla ice cream and some granola and chopped pecans, it’s a fantastic dessert that always hits the spot.

- This is a simple recipe for a classic dessert everyone loves.
- You’ll love the added bonus of cake on top!
Cooking Tips and Variations
- As mentioned above, you can use canned peaches in a pinch.
- You can also use a boxed cake mix to save yourself some time and effort. However, keep in mind, there is nothing quite as tasty as a dessert made from scratch using fresh ingredients!
- Add vanilla to the cake or a dash of cinnamon for extra flavor.
- A sprinkle of cinnamon sugar on the peaches is also a nice twist.
- For depth of flavor in the peach layer, toss the peaches around in a small splash of rum or Bourbon before adding them to the dish.
- Make this recipe using a different kind of fresh fruit next time. Use sliced pears, apples, pineapples, mangoes, strawberries, raspberries, or whatever fruit you love.
Ingredients for Cake Batter Peach Cobbler Recipe
- All-purpose flour: Measure your flour accurately so you’re not adding too much. You don’t want a dense cake topping.
- Baking soda: This is what keeps the cake light, airy, and soft.
- Cream of tartar: When combined with the baking soda, the reaction provides a wonderfully tender texture.
Salt: To bring out the flavors. We’re able to control the amount we add since we’re using unsalted butter. - Unsalted butter: Bring it out to room temperature so it’s soft enough to blend easily. You’ll also need a bit extra for greasing the baking dish.
- Sugar: We add sugar to the cake batter but we also use it to sprinkle over the peaches before baking. It brings out even more of the natural fruit juices.
- Large egg: For binding the ingredients so the cake doesn’t crumble.
- Buttermilk: Adding buttermilk to baked goods gives it amazing flavor and a more tender crumb. This along with the baking soda and cream of tartar, will give it the best results.
- Sliced peaches: I like to keep the skin on my peaches and slice them that way, however if you prefer to peel it, you can. Peach cobbler with fresh peaches is best, but you can certainly swap with canned peaches in a pinch.
How to Make Peach Cobbler
Step 1: In a medium mixing bowl, sift together the flour, baking soda, cream of tartar, and salt.
Step 2: In a separate large bowl, cream together the butter and sugar until light and fluffy. Then, beat in the egg.
Step 3: Gradually add the dry ingredients into the wet ingredients, alternating with adding the buttermilk. Make sure to mix well after each addition.
Step 4: Grab your sliced peaches and arrange them into the bottom of the greased baking dish. They should be spread out evenly, but overlapping is ok.
Step 5: Sprinkle the peaches with the remaining sugar, and then pour the batter evenly on top. Use a spatula to spread it out, if necessary.
Step 6: Bake for 40-50 minutes in a preheated 350°F oven until the top is golden brown.
Step 7: Remove it from the oven and let it cool for 10 minutes. It will still be nice and warm. Serve with ice cream and granola or chopped pecans.
Enjoy!
What to Serve With Cake Peach Cobbler
Most often, we have this peach cobbler with a scoop of vanilla bean ice cream with a sprinkling of granola or chopped nuts for added crunch.
You can certainly enjoy this cake cobbler on its own, or with a dollop of whipped cream. We’ve even had it with a drizzle of caramel sauce.
Recipe FAQs
They are both similar in that they each have the same fruit bottom layer, but the topping is where they differ.
A traditional cobbler is topped with dollops of biscuit dough (they look like cobbled streets when they’re baked), and a peach crumble has a crispy streusel topping.
This could be the case if you used canned peaches. If you used fresh, juicy peaches, it may just need a bit more time in the oven.
Keep in mind, it will be a bit runny as the sugars break down the fruit into syrupy deliciousness. Letting it cool and set for a bit will help!
Keep leftovers stored in an airtight container for up to 3 days in the fridge. You can also freeze it beautifully for up to 2 months. Thaw it in the fridge overnight.
If it’s just a single serving, pop it in the microwave to reheat. If it’s almost an entire dish, then you can reheat it in the oven until it is completely warmed through.

Cake Peach Cobbler with Fresh Peaches
Equipment
Ingredients
- 1 ½ cup all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon sea salt
- 8 tablespoons butter 1 stick, room temperature + more for greasing the baking dish
- 1 cup sugar divided = ¾ cup + ¼ cup
- 1 large egg
- ½ cup buttermilk
- 6 cups peaches sliced with peel on
Instructions
- Let's start by preheating your oven to 350°F and greasing a 9 × 13-inch baking dish with some butter. In a mixing bowl, combine flour, baking soda, cream of tartar, and a pinch of salt.
- Using your stand mixer, cream together softened butter and ¾ cup of sugar until it's nice and fluffy. Then, beat in an egg until everything is mixed well. Now, gradually add the flour mixture and buttermilk, switching between the two and making sure to mix well after each addition.
- Next, arrange those juicy peaches in the prepared baking dish and sprinkle them with the remaining ¼ cup of sugar. Spoon the batter over the peaches, making sure it's nice and even. Pop the dish in the oven and bake for 40-50 minutes, or until the top is a beautiful golden brown and a toothpick inserted into the batter comes out clean.
- Once it's done baking, let the peach cobbler cool for about 5-10 minutes before digging in. Serve warm cobbler with a scoop of vanilla ice cream and a sprinkle of granola or chopped pecans. Enjoy!
