Blueberry Cake - An easy, moist, and fabulous blueberry cake made with pantry staples, fresh blueberries, and farmer’s cheese! With no mixer needed, you can make this cake quickly and easily when you want something special yet effortless to serve your guests. Loaded with blueberry flavor and a sugar-crumb topping, this cake will become a fast favorite!

Allow me to introduce you to your new favorite blueberry cake! It’s a different take on your everyday blueberry cake with crumb topping because not only is it baked on a baking sheet, but it is topped with fresh farmer’s cheese, plump blueberries, and a sweet buttery brown sugar crumble.
It’s easy, perfectly sweet, and delicious for breakfast, brunch, snack, or dessert!
I make it year-round using fresh blueberries during blueberry season and thawed from frozen the rest of the year. You can’t go wrong with a simple slice of heaven and a hot cup of tea.
You might wonder why someone would add cheese to the top of a blueberry cake. Rest assured, it’ll taste more like cheesecake than it would a pizza! It does to baking what ricotta or cottage cheese does, but in my opinion, a farmer's cheese cake is even better.
Try it, I know you’ll agree!
Ingredients Needed for Blueberry Crumb Cake
- Large Eggs: This cake requires quite a few eggs to keep it all together. Since it’s a flatter cake, it’s also a larger cake, so 4 eggs are required.
- Sugar: This cake is not overly sweet, but if you prefer a sweeter-tasting blueberry cake, add 1 ¼ cup of sugar instead of just 1 cup.
- Buttermilk: Love making blueberry cake with buttermilk. The rich and tangy flavor is amazing and the acid that reacts with the baking powder gives it moisture and a fluffy texture.
- Butter, melted: Since there is no added salt in this blueberry cake, I prefer to use salted butter to enhance the flavor even more. You can use unsalted if you prefer.
- All-Purpose Flour: Measure the flour correctly so that the texture of your cake is not dense or dry in the end. It’s not the highest cake or the most layered, so it’s important that it remains nice and light!
- Baking Powder: A leavening agent that prevents your cake from falling flat.
- Farmer’s Cheese: This is a mild, soft, and creamy cheese made essentially with whole milk and vinegar. You can pick some up at your local cheese shop or farmer’s market if you haven’t already made some yourself.
- Fresh blueberries: Don’t forget to wash them and pick them over for stems and debris. You also want to discard any soft and mushy blueberries that no longer look fresh.
- Powdered Sugar: A dusting of powdered sugar is a great way to finish the cake with a bit of extra sweetness.
- For the Crumble: Sugar, brown sugar, flour, and melted butter come together to form a crunchy, sugary, caramelized topping.
How to Make Blueberry Cake
Step 1: Whisk eggs and sugar in a mixing bowl then add the butter milk and melted butter. Continue mixing until combined.
Step 2: In a separate bowl, whisk together the flour and baking powder.
Step 3: Add the dry ingredients to the wet batter and whisk until there are no lumps.
Step 4: Spread the blueberry cake batter evenly onto a parchment-lined 13 x 18 baking sheet and top with the farmer’s cheese then the blueberries, making sure to spread it out evenly.
Step 5: Sprinkle the crumble topping over the top and bake for 35-40 minutes until the top is golden.
Step 6: Dust the top with powdered sugar and enjoy a slice or two!
Cooking Tips
- Make sure to line the baking sheet with parchment paper. Not only will it prevent it from sticking, but it’s easy to use the sides of the parchment paper to lift the entire cake onto a cutting board for easy slicing.
- Leftovers will keep in the fridge in an airtight container for up to 4 days. It tastes amazing cold too!
- For a little extra flavor in your crumble, add a bit of cinnamon to the sugar and flour mixture.
- Blueberry and lemon are a great combination. Feel free to add some lemon juice to the batter or sprinkle a little lemon zest on top.
What to Serve with Blueberry Cake
In the morning, we like to have a slice of coffee cake and enjoy it with our morning tea or coffee. The kids like theirs with a cup of hot chocolate or with a dollop of yogurt.
For dessert, it’s always nice with a scoop of ice cream or a bit of whipped cream on top!

For the Blueberry Cake
- 4 large eggs
- 1 cup sugar if you like your cake on a sweeter side use 1 ¼ cup of sugar
- 1 cup buttermilk
- 7 tablespoons butter melted, I like to use salted butter
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- 2 ½ cups farmers cheese
- 1 ½ cups blueberries
For the Crumble Top
- 3 tablespoons sugar
- 3 tablespoons brown sugar
- ⅓ cup flour
- 5 tablespoons butter melted
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350F and line baking sheet 13" by 18" with parchment paper. In a mixing bowl combine eggs and sugar, whisk until combined. Next add buttermilk and melted butter, whisk until combined.
- In a different bowl add flour and baking powder, whisk to combine.
- Add flour to batter whisk it up until there are no lumps.
- Spread the batter evenly onto a baking sheet, evenly spread farmers cheese over the top and add blueberries. Sprinkle crumble topping over the top. Bake for 35-40 minutes or until the top is golden color.
- Dust powdered sugar over the top and enjoy!

- In a mixing bowl add all of the ingredients and mix until combined.

- When baking, it's always a good idea to line your baking sheet with parchment paper. Not only will it prevent your crumble from sticking, but it'll also make it easy to lift onto a cutting board for serving.
