This High-Protein Cottage Cheese Flatbread is one of those magic recipes that feels too easy to be true. Made with just a handful of simple ingredients, it bakes into soft, flexible flatbreads that are naturally low-carb, gluten-free, and packed with protein.
Blend it smooth: Blend cottage cheese, eggs, and garlic powder until completely smooth and creamy.
Prep your baking sheet: Line a large baking sheet with parchment paper.Spray with avocado oil spray.
Make perfect circles: Use a ladle or large cookie scoop to portion the batter onto the parchment. Create round circles about 5–6 inches wide. Use the back of the spoon to smooth them into even, circular shapes. Sprinkle with Everything But the Bagel seasoning over the top. Tip: Leave space between each circle — they spread slightly.
Bake: Bake at 350°F (176°C) for 15–25 minutes, depending on the thickness. They’re done when the edges are lightly golden and the center is set. (If you make them thicker, add 5–10 minutes.)
Cool completely: Let them cool fully on the baking sheet so they firm up and stay flexible. Enjoy as:• High-protein tortillas• Mini pizza crusts• Folded breakfast chicken wraps• Snack rounds with hummus or cottage cheese• Low-carb sandwich thins

Notes
Blend until ultra-smooth: For the best texture, make sure the batter is completely smooth with no cottage cheese curds left. A high-speed blender works best.
Parchment paper is key: Don’t skip lining the baking sheet—this prevents sticking and makes the flatbreads easy to lift once cooled.
Size matters: Spreading the batter into 5–6 inch circles creates the perfect balance between flexibility and structure. Thicker flatbreads will need extra baking time.
Let them cool completely: This is important! The flatbreads firm up as they cool and become easier to fold, wrap, or stack.
Season to taste: Everything But the Bagel seasoning adds great flavor, but feel free to swap in sesame seeds, Italian seasoning, or even a sprinkle of cheese.
Great for meal prep: Store cooled flatbreads in the fridge for up to 4 days. Reheat gently in a skillet or air fryer to bring back softness.
