Using two mixing bowls, in first one - Whisk ½ cup melted butter, 3 eggs, 1 ½ cup buttermilk, 1 teaspoon of vanilla extract. Whisk until everything is combined. In the second bowl combine 1 ¾ cup of flour, 2 teaspoon of baking powder, 1 teaspoon of baking soda, 3 teaspoon sugar, 2 teaspoons of chia seeds and ½ teaspoon Kosher salt.
Combine wet mixture with dry one, mix until everything is combine! Cook batter in your waffle maker. Serve with maple syrup or condensed milk, my favorite! Enjoy with the people you love! Happy cooking!
Notes
Don’t overmix the batter: Once your waffle batter is combined, resist the urge to keep stirring! Overmixing can knock out all that lovely air you’ve incorporated, which leads to dense, flat waffles. For light and fluffy waffles, mix just until everything is combined.
Keep waffles warm while you cook the rest: Since most waffle makers cook one at a time, keep finished waffles warm by placing them on a baking sheet in a 225°F oven. This way, everyone gets to enjoy warm waffles together—no more fighting over the first one!
Customize your waffle batter: Get creative! For sweet waffles, fold in chocolate chips, fresh blueberries, or diced strawberries. Want something savory? Skip the sugar and add diced ham, shredded cheese, or chopped chives for a fun twist.
Double (or triple!) the batch: Waffles freeze beautifully! Make a larger batch and store extras in the freezer for busy mornings. Just pop them in the toaster or oven to reheat for a quick, homemade breakfast anytime.
