Using a skillet, heat over medium heat oil and butter. Add onion and sauce for 5 - 7 minutes, or until golden color and onion is soft. Stirring few times.
Into the same skillet add grated carrot, sliced mushrooms and season with salt and pepper to taste. Cook for 5 minutes stirring few times, or until mushrooms and carrots are cooked thru.
Sprinkle flour, stir and cook for 1 minutes, stirring continuously.
Slowly pour in heavy whipping cream, stir and bring it to a gentle boil, season with salt and pepper if needed.
Turn off the heat, pour the gravy over Mashed Potatoes. Garnish with parsley and a sprinkle of black pepper. Enjoy!
