Let filet mignon rest on the counter at room temperature for 20-30 min. Preheat the oven to 450F. Season steak on all sides and wrap bacon around it, securing the ends with a toothpick.
Heat cast iron skillet over medium/high heat for 3-5 min. Add oil and butter. Once melted add steak and sear for 2-3 min. Flip and sear on the other side for 2-3 minutes.
Transfer the skillet into the oven for 7 minutes. After, remove from the oven, let rest for 10 min on a cutting board or in the skillet. Garnish with thin slices of butter and chives. Serve with mashed potatoes and Caesar salad. Enjoy!
