In a small mixing bowl combine 1 tablespoon of avocado oil, 2 teaspoons of freshly squeezed lime juice, 2 teaspoons of fajita seasoning, ½ teaspoon chili powder and ¼ teaspoon of salt. Give it a very good mix.
How to Make Chicken Fajitas
Now, coat each side of chicken tenders with fajita seasoning marinate. Next, using a nonstick skillet or cast iron preheat 1 tablespoon of avocado oil, add chicken tenders and cook for 2 to 3 minutes on each side over medium-high heat or until chicken is no longer pink. Transfer to a cutting board. Once cooled, cut into bite size pieces.
Wipe the skillet with paper towel (or wash it!), then add 1 tortilla for 30 seconds flip on the other side and add ½ cup of cheddar cheese, once cheese melts transfer to a plate and add spring mix leaves, ¼ of chicken pieces and salsa over the top.
Choose the Right Chicken: For tender and juicy fajitas, go for boneless, skinless chicken breasts or thighs. Thighs are extra flavorful thanks to their fat content!
Marinate the Chicken: Let your chicken soak in a tasty marinade for at least 30 minutes, but overnight is even better! Trust me, it really enhances the flavor.
Use Fresh Veggies: Fresh bell peppers in red, green, and yellow, along with onions, are the way to go! Slice them into strips to get that perfect texture and flavor when they’re sautéed.
Preheat Your Pan: Get your skillet or cast-iron pan nice and hot before adding the chicken. This helps give it a beautiful sear and locks in all those juicy flavors!
Don’t Overcrowd the Pan: If you have a lot of chicken, cook it in batches. Overcrowding can lead to steaming, and we want that lovely golden brown color!
Cook the Vegetables Separately: After the chicken is done, sauté the peppers and onions on their own. This keeps them crisp and colorful—just the way we like them!
Warm Up Tortillas: A little warmth goes a long way with tortillas. Heat them on a skillet or in the oven (wrapped in foil) to make them soft and extra yummy.
Toppings Galore: Set out a fun selection of toppings like salsa, easy guacamole, sour cream, shredded cheese, and fresh cilantro so everyone can build their perfect fajita!
Serve Immediately: Fajitas are best enjoyed fresh and hot! Bring everything to the table for a lively, interactive dining experience. Enjoy every bite!
