This Hot Honey Halloumi Grilled Cheese is crispy, cheesy, sweet, and spicy! Golden pan-fried halloumi and gooey mozzarella are layered with fresh greens on sourdough, grilled until perfectly golden, then finished with homemade hot honey and chili flakes.
Make the hot honey. In a small bowl, stir together honey, chili flakes, and cayenne pepper. Set aside.
Pan-fry the halloumi. Heat olive oil in a skillet over medium heat. Add the sliced halloumi and cook for 1–3 minutes per side, or until golden brown and lightly crisp. Transfer to a plate.
Butter the bread. Spread softened butter evenly over one side of each sourdough slice.
Assemble the sandwiches. Place the bread butter-side down. Layer with shredded mozzarella, golden halloumi, fresh basil, and a drizzle of hot honey. Top with the more mozzarella and bread, butter-side up.
Grill until golden and melty. Heat a skillet over medium-low heat. Cook the sandwiches for 3–4 minutes per side, gently pressing with a spatula, until the sourdough is golden brown and crisp and the mozzarella is melted.
Finish and serve. Transfer to a cutting board and drizzle with extra hot honey. Sprinkle with chili flakes, slice in half, and serve immediately while warm and melty. It pairs beautifully with a simple salad, tomato soup, or crispy fries.
