    • Chili Flakes – Add a gentle kick and a little texture to the hot honey. Add more if you like your hot honey grilled cheese extra spicy.
    • Cayenne Pepper – Adds another layer of heat to the sweet honey. Start with a small pinch and adjust to your preferred spice level.

    For the Hot Honey Halloumi Grilled Cheese

    • Sourdough Bread – A sturdy, slightly tangy bread that gets beautifully golden and crispy in the skillet. It holds up perfectly to the gooey cheese and hot honey.
    • Halloumi Cheese – The star of this grilled cheese sandwich! Pan-frying the halloumi gives it crispy, golden edges while keeping the inside deliciously chewy and salty.
    • Shredded Mozzarella – Adds plenty of gooey, melty cheese to balance the crispy halloumi. Monterey Jack, provolone, or another good melting cheese can also be used.

    • Olive Oil – Used to pan-fry the halloumi until golden and lightly crisp around the edges.
    • Hot Honey – The secret ingredient that makes this recipe so irresistible. The sweet and spicy honey pairs perfectly with salty halloumi and melty mozzarella. Save extra for drizzling over the finished sandwich.
    • Arugula or Fresh Basil – Adds a fresh, peppery or herby flavor that cuts through the richness of the cheese. Baby spinach can also be used.

    How to Make Hot Honey Halloumi Grilled Cheese

    1. Make the hot honey.

Mix honey, chili flakes, and cayenne in a small bowl until well combined. Adjust the heat to your liking.
    Spread softened butter evenly over one side of each sourdough slice for a golden, crispy grilled cheese crust.

    In a small bowl, stir together the honey, chili flakes, and cayenne pepper.

    Set aside while you prepare the sandwich.

    Love it spicy? Add another pinch of chili flakes or cayenne.

    Butter one side of each slice of sourdough.

    2. Fry the halloumi.

    Heat the olive oil in a skillet over medium heat.

    Add the sliced halloumi and cook for 1–3 minutes per side, until golden brown.

    Remove from the skillet and set aside.

    Don't walk away from the skillet here—halloumi cooks quickly!

    3. Assemble the sandwiches.

    Place two slices butter-side down.

    Layer the mozzarella, fried halloumi, and basil on top.

    Drizzle with hot honey.

    Top with the remaining bread slices, keeping the buttered side facing out.

    4. Grill until golden.

    Place the second slice of sourdough on top and gently press the sandwich together.

    Heat the skillet over medium-low heat.

    Place the sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the mozzarella is melted.

    The key is medium-low heat. If the skillet is too hot, the bread will brown before the cheese has time to melt.

    5. Finish with hot honey.

    Transfer the sandwiches to a cutting board.

    Slice.

    Drizzle with more hot honey and sprinkle with chili flakes.

    Medium-low heat is your friend. It gives the bread time to become crispy while allowing the mozzarella to melt.

    Use good sourdough.

    Add the hot honey after cooking, too.

    Don't be shy with it! A little inside the sandwich gives you sweetness throughout, while an extra drizzle on top makes the flavor really pop.

    • I don't recommend microwaving it because the bread can become soft.

    • 4 slices sourdough bread
    • 7 oz halloumi cheese sliced
    • 1 cup mozzarella shredded
    • 2 tablespoons butter
    • 1 teaspoon olive oil
    • 2 tablespoons hot honey
    • handful basil or arugula
    • chili flakes to taste

    Hot Honey

    • ¼ cup honey
    • ½ teaspoon chili flakes
    • pinch cayenne

    Instructions
     

    • Make the hot honey. In a small bowl, stir together honey, chili flakes, and cayenne pepper. Set aside.
    • Pan-fry the halloumi. Heat olive oil in a skillet over medium heat. Add the sliced halloumi and cook for 1–3 minutes per side, or until golden brown and lightly crisp. Transfer to a plate.
    • Butter the bread. Spread softened butter evenly over one side of each sourdough slice.
    • Assemble the sandwiches. Place the bread butter-side down. Layer with shredded mozzarella, golden halloumi, fresh basil, and a drizzle of hot honey. Top with the more mozzarella and bread, butter-side up.
    • Grill until golden and melty. Heat a skillet over medium-low heat. Cook the sandwiches for 3–4 minutes per side, gently pressing with a spatula, until the sourdough is golden brown and crisp and the mozzarella is melted.
    • Finish and serve. Transfer to a cutting board and drizzle with extra hot honey. Sprinkle with chili flakes, slice in half, and serve immediately while warm and melty. It pairs beautifully with a simple salad, tomato soup, or crispy fries.
