    This easy Heirloom Tomato Bruschetta is one of my favorite ways to enjoy fresh summer tomatoes. Juicy heirloom tomatoes, fresh basil, garlic, olive oil, and balsamic vinegar are spooned over crispy, garlic-rubbed bread for an easy Italian-inspired appetizer that's ready in just 20 minutes.

    When heirloom tomatoes are at their peak, I honestly don't want to do too much to them. They're already sweet, juicy, colorful, and full of flavor, so this bruschetta keeps things simple and lets the tomatoes shine.

    I love serving this fresh tomato bruschetta as an appetizer for summer dinners, backyard gatherings, holidays, or whenever I have beautiful tomatoes sitting on my kitchen counter.

    Bruschetta is a simple Italian appetizer made with toasted bread that's traditionally rubbed with garlic and topped with fresh ingredients.

    For this version, I'm using juicy heirloom tomatoes, fresh basil, garlic, olive oil, balsamic vinegar, and a little red onion. The combination is simple, but every bite has plenty of flavor.

    • Heirloom Tomatoes – The star of this heirloom tomato bruschetta! Choose ripe, juicy tomatoes for the best flavor. I love using a mix of red, yellow, orange, and purple tomatoes for beautiful color and variety.
    • French Baguette or Rustic Italian Bread – Choose a sturdy loaf that can hold the juicy tomato topping without falling apart. Sourdough or ciabatta are also delicious options.
    • Extra-Virgin Olive Oil – Adds richness to the tomato mixture and helps the bread turn beautifully golden and crisp when toasted. Use a good-quality olive oil since its flavor really comes through.
    • Fresh Garlic – Fresh garlic gives this tomato bruschetta its classic flavor. I use some in the tomato mixture and rub a cut garlic clove directly over the warm toasted bread for an extra layer of garlic flavor.
    • Fresh Basil – Adds a bright, fresh, and slightly sweet flavor that pairs beautifully with ripe tomatoes. Don't be shy with the basil!
    • Red Onion or Shallot – Adds a little crunch and a mild savory bite to balance the sweetness of the tomatoes. Shallots are a great option if you prefer a more delicate onion flavor.
    • Balsamic Vinegar – Adds a touch of acidity and sweetness that brings all the flavors together. Start with a little and add more to taste.
    • Kosher Salt – Brings out the natural sweetness and flavor of the tomatoes. Since tomatoes can vary in size and flavor, season to taste.
    • Freshly Cracked Black Pepper – Adds a subtle peppery bite and balances the sweetness of the tomatoes and balsamic vinegar.
    • Honey – Optional, but this is one of my little tricks when the tomatoes are more tart than sweet. Just a teaspoon helps balance the acidity without making the topping taste overly sweet.
    • Balsamic Glaze – Optional for finishing. A light drizzle adds beautiful color and a sweet, tangy flavor to the finished bruschetta.
    • Flaky Sea Salt – A small sprinkle right before serving gives the bruschetta a delicious finishing touch and a little texture.

    How to Make Heirloom Tomato Bruschetta

    Step 1: Prepare the Tomatoes

    Heirloom tomatoes diced into small pieces for bruschetta.
    Fresh tomatoes and basil seasoned with salt and black pepper.

    Start by chopping the heirloom tomatoes into small, bite-size pieces.

    If your tomatoes are especially juicy, place the chopped tomatoes in a fine-mesh strainer and let them drain for 5–10 minutes.

    You don't need to throw away the tomato juice. I like to save it for adding to pasta sauce, salad dressing, or drinking it.

    Step 2: Make the Tomato Topping

    Add the chopped tomatoes, olive oil, balsamic vinegar, minced garlic, basil, red onion, salt, and black pepper to a bowl.

    Gently toss everything together.

    Give it a taste. If your tomatoes are more acidic than sweet, add a teaspoon of honey. I especially love this little trick when tomatoes aren't quite as sweet as I hoped.

    Let the tomato mixture sit for 10–15 minutes so the flavors can come together.

    Step 3: Toast the Bread

    Slice the baguette diagonally into about ½-inch slices.

    Lightly brush both sides with olive oil.

    Toast the bread under the broiler or on a grill until golden brown and crisp around the edges.

    Keep a close eye on it because bread can go from golden to burnt very quickly.

    Step 4: Rub the Toast With Garlic

    While the bread is still hot, rub the cut side of the peeled garlic clove over each slice of toasted bread.

    This gives the bread a delicious garlic flavor without making the tomato topping overwhelmingly garlicky.

    Step 5: Assemble the Bruschetta

    Right before serving, use a slotted spoon to scoop the tomato mixture onto each piece of toasted bread.

    The slotted spoon is important because it leaves some of the excess tomato juices behind and helps keep the bread crisp.

    Step 6: Finish and Serve

    Top with fresh basil and a light drizzle of balsamic glaze.

    Finish with a tiny sprinkle of flaky sea salt and another drizzle of good extra-virgin olive oil.

    My Best Tips for Perfect Bruschetta

    Use ripe heirloom tomatoes

    • The tomatoes are the star of this recipe, so choose tomatoes that are ripe, fragrant, and juicy.
    • I love using a mixture of red, yellow, orange, and purple heirloom tomatoes because they make the bruschetta look beautiful.

    Don't skip the garlic-rubbed bread

    • Instead of mixing lots of raw garlic into the tomato topping, I rub a fresh garlic clove directly onto the hot toast.
    • It's simple and gives every bite a subtle garlic flavor.

    Keep the bread crispy

    • The biggest secret to great bruschetta is keeping the toasted bread crisp.
    • Don't spoon the tomato topping onto the bread until you're ready to serve.

    Taste before serving

    Tomatoes can vary quite a bit in sweetness and acidity. Taste your tomato mixture before serving and adjust the salt, pepper, balsamic vinegar, or honey as needed.

    Serve immediately

    Once the juicy tomatoes sit on the toasted bread, the bread will gradually soften. For the best texture, assemble the bruschetta right before serving.

    What Kind of Tomatoes Are Best?

    • I recommend using ripe heirloom tomatoes because they have incredible flavor and come in so many beautiful colors and shapes.
    • You can use one variety or a combination of heirloom tomatoes.
    • If heirloom tomatoes aren't available, ripe vine tomatoes, Roma tomatoes, or cherry tomatoes will also work.

    What Bread Should I Use?

    My favorite bread for bruschetta is a French baguette or rustic Italian loaf.

    You can also use:

    • Sourdough bread
    • Ciabatta
    • Country-style bread
    • French bread

    Choose bread with a sturdy crust and enough structure to hold the juicy tomato topping.

    Can I Make Bruschetta Ahead of Time?

    • Yes, but I recommend keeping the components separate.
    • Prepare the tomato mixture a few hours ahead and store it covered in the refrigerator.
    • Toast the bread separately and keep it at room temperature.
    • When you're ready to serve, spoon the tomato mixture over the toasted bread and add the garnishes.
    • I don't recommend assembling the bruschetta too far in advance because the tomato juices will soften the bread.

    How to Store Leftover Tomato Bruschetta

    • Store leftover tomato topping in an airtight container in the refrigerator for up to 2 days.
    • Store toasted bread separately at room temperature.
    • For the best texture, don't store assembled bruschetta because the bread will become soggy.

    Easy Variations

    Add mozzarella

    Add small pieces of fresh mozzarella or mini mozzarella balls for a creamy, cheesy twist.

    Add Parmesan

    Freshly grated Parmesan adds a delicious salty flavor.

    Add avocado

    For a heartier appetizer, gently fold diced avocado into the tomato mixture just before serving.

    Add peaches

    For a summer twist, add finely diced ripe peaches to the tomato mixture.

    Make it spicy

    Add a pinch of red pepper flakes for a little heat.

    Add pesto

    Drizzle a little fresh basil pesto over the finished bruschetta before serving.

    I love serving this fresh tomato appetizer before an easy Italian-inspired dinner.

    What is the difference between bruschetta and crostini?

    Bruschetta traditionally refers to grilled or toasted slices of rustic bread that are rubbed with garlic and topped with fresh ingredients. Crostini are generally smaller, thinner toasted slices of bread.

    Should bruschetta be served hot or cold?

    The tomato topping can be cool or at room temperature, but I recommend serving it over freshly toasted, warm bread. The contrast between the juicy tomatoes and crispy bread is delicious.

    Why does my bruschetta get soggy?

    The tomato mixture naturally contains a lot of liquid. To help prevent soggy bread, drain excess tomato juice before topping the bread and assemble the bruschetta immediately before serving.

    Can I use cherry tomatoes?

    Absolutely. Cherry or grape tomatoes work well when heirloom tomatoes aren't available. Simply cut them into small pieces before making the topping.

    Can I use dried basil?

    Fresh basil is strongly recommended for this recipe. It has a brighter flavor and works especially well with fresh tomatoes.

    For the tomato topping

    • 3 cups heirloom tomatoes ripe, finely diced
    • 2 tablespoon extra-virgin olive oil
    • 1 tablespoon balsamic vinegar
    • 1 clove garlic finely minced
    • 2 tablespoons fresh basil finely chopped, plus more for garnish
    • ¼ teaspoon sea salt or to taste
    • ¼ teaspoon black pepper freshly cracked
    • 1 tablespoon red onion  finely minced
    • 1 teaspoon honey optional — my little trick to balance acidic tomatoes

    For the bread

    • 1 French baguette or rustic Italian loaf, cut into about 12 sices
    • 2 tablespoons extra-virgin olive oil
    • 1 clove garlic peeled

    For finishing

    • Balsamic glaze
    • Fresh basil leaves
    • Flaky sea salt
    • Extra-virgin olive oil

    Instructions
     

    • Dice the tomatoes. Cut the heirloom tomatoes into small, even pieces. If they're extremely juicy, let them drain in a fine-mesh strainer for about 5–10 minutes. This helps prevent soggy bruschetta.
    • Make the tomato mixture. Add tomatoes, olive oil, balsamic vinegar, garlic, basil, red onion, salt and pepper to a bowl. Gently toss. Taste and adjust the salt and acidity. Add the honey if your tomatoes are particularly tart.
    • Let the flavors mingle. Allow the tomato mixture to sit for about 10–15 minutes. This gives the tomatoes time to release their juices and lets the flavors come together.
    • Toast the bread. Slice the baguette diagonally into ½-inch slices. Brush lightly with olive oil and toast under a broiler for 1-2 minutes or on a grill until golden and crisp on the outside.
    • Rub with garlic. While the bread is still hot, rub each slice with the cut side of a garlic clove.
    • Assemble right before serving. Use a slotted spoon to scoop the tomato mixture onto each piece of toast, leaving the excess liquid behind.
    • Finish like a restaurant. Add fresh basil, a tiny drizzle of balsamic glaze, a little flaky sea salt and a final drizzle of extra-virgin olive oil. Enjoy!

    • Use heirloom tomatoes at peak ripeness. That's where the flavor comes from.
    • Salt the tomatoes before serving to bring out their flavor.
    • Garlic-rub the hot bread rather than simply mixing tons of raw garlic into the tomatoes.
    • Don't drown the bread. Excess tomato juice is the #1 enemy of crispy bruschetta. Martha Stewart specifically recommends using a slotted spoon.
    • Assemble at the last minute. Bruschetta is best when the bread is still crisp.
    • Use a mix of tomato colors—red, orange, yellow and purple heirlooms make it look absolutely gorgeous.
