Ingredients for Cheesy Fries Recipe

- Butter and flour: Together these make the roux that thickens the beer cheese sauce.
- Seasoning: Onion powder, garlic powder, cayenne, and salt. Adjust the amount of cayenne to your liking.
- Milk and beer: Milk gives the sauce its creamy base while the beer gives it a depth of flavor.
- Dijon mustard and Worcestershire sauce: For the tangy, zingy element.
- Sharp cheddar and pepper Jack cheese: I always recommend shredding your own cheese fresh from a block for the best flavor and easy, smooth melting. Packed pre-shredded cheese is just not the same.
- Jalapeno and fresh chives: For topping.
- Air fryer fries: For serving. Homemade air fryer fries or frozen, it’s up to you! I use the air fryer to get them super crispy without a ton of oil.
How to Make Homemade Loaded Fries

Step 1: In a deep skillet, melt the butter and then whisk in the flour and spices until a thick paste is formed (the roux).

Step 2: Slowly pour in the milk and beer, continuously whisking, until it’s smooth and lump-free.

Step 3: Stir in the mustard and Worcestershire sauce. Let them come to a bubbling boil until thick and creamy.
Step 4: Turn off the heat and stir in the cheese until smooth.

Step 5: Pour over a plate of crispy fries, top your pub style loaded fries with sliced jalapeño and chives, and enjoy.

These fries are best enjoyed hot and fresh while the cheese is melty and the fries are still crisp!
Tips for the Best Loaded Fries Recipe
- Choose the right fries. Thick-cut or crinkle-cut fries hold up best under the weight of the cheese sauce and toppings without getting soggy.
- Bake or fry until extra crispy. Go a little longer than usual so the fries stay crisp!
- Use freshly shredded cheese. Pre-shredded cheese can make the sauce grainy because of the anti-clumping coating it comes with.
- Keep the heat low when making the beer cheese to prevent it from separating or becoming gritty.
Loaded Cheese Fries Topping Ideas
The best part about anything loaded, like nachos, potatoes, and fries, is that you can pick and choose your own toppings! You could also set out a DIY loaded fries station and have everyone pick what they want.
- Green onions
- Sour cream
- Crispy bacon
- Shredded chicken
- Caramelized onions
- Guacamole with jalapeno
- Pickles
- Diced tomatoes
What can I serve with loaded fries?
They pair perfectly with juicy beef sliders, a bacon grilled cheese sandwich with caramelized onions, air fryer wings, oven baked wings, or even a simple cucumber tomato salad if you want to balance out the richness.
FAQs
You can prepare the beer cheese sauce ahead and reheat it gently on the stovetop. However, fries are best cooked fresh to keep them crispy.
A mild lager or pale ale works best. Avoid overly bitter beers (like strong IPAs) that can overpower the cheese sauce. If you have leftover beer, you can also make The BEST Beer Battered Shrimp.
Yes! You can substitute the beer with milk or a mix of broth and a splash of apple cider vinegar for a similar depth of flavor.
Use freshly shredded cheese and keep the heat low. Stir constantly and avoid boiling the sauce, as high heat can cause it to become grainy or separate.
Reheat fries in the oven or air fryer to bring back some crispiness, and warm the cheese sauce separately. Avoid microwaving everything together, as it can make the fries soggy.

- ⅛ teaspoon cayenne pepper or to taste
- sea salt to taste
- 1 cup milk
- ⅔ cup beer light beer
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 cups sharp cheddar cheese shredded
- 1 cup pepper jack cheese shredded
For Loaded Fries
- 40 oz fries waffle cut store-bought air fried or homemade air fryer fries
- 1 jalapeno washed and sliced
- 2 tablespoons chives finely chopped
Instructions
- Make the Sauce: In a deep skillet set over medium/low heat, melt the butter until fully melted and gently bubbling. Whisk in the flour, onion powder, garlic powder, cayenne, and salt. Cook for about 1 minute, whisking constantly, until the mixture looks smooth, lightly golden, and smells fragrant, this helps remove the raw flour taste.
- Add Liquids: Slowly pour in the milk and beer, a little at a time, whisking continuously to keep the sauce smooth and lump-free. Once all the liquid is added, continue cooking over medium heat, stirring often, until the sauce thickens, becomes creamy, and starts to gently bubble.
- Season & Thicken: Stir in the Dijon mustard and Worcestershire sauce, mixing until fully combined. Let the sauce cook for another minute until rich and velvety.
- Add Cheese: Turn off the heat and immediately add the shredded cheddar and pepper jack cheese. Stir until completely melted and smooth. If needed, return to very low heat briefly to help the cheese melt, stirring constantly. Taste and adjust salt if needed.
- Serve: Pour the warm cheese sauce over crispy air fryer fries and top with sliced jalapeños and fresh chives.
