CHRISTMAS Cookies WHOOPIE PIE Cookie Recipe – YOUR friends & family won’t be able to resist these soft & sweet Christmas cookies called Whoopie Pies. They are made of 2 soft & fluffy chocolate cookies, filled with cream cheese filling and dipped in candy canes pieces.  They are so scrumptious!!!
You can create these most delicious Christmas Cookies and give them away to your neighbors, take them to the Christmas Party or simple place them in a beautiful can and put it in the Christmas stocking. They make the perfect Christmas Gift! Don’t YOU think!?!

Ingredients YOU will need to make these Christmas Cookies:
- 1 cup sugar
- ½ cup butter, softened
- ½ cup buttermilk
- 2 teaspoons vanilla extract
- 2 eggs
- 2 oz unsweetened baking chocolate, melted and cooled
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon Kosher salt

HOW TO MAKE WHOOPIE PIES:
Step One
Preheat the oven to 400F. Line a baking sheet with a parchment paper, set aside.
Step Two
In a large mixing bowl, using a mixer whisk 1 cup sugar with ½ cup softened butter, ½ cup of buttermilk, 2 teaspoons of vanilla extract, 2 eggs and 2 oz melted unsweetened chocolate. Whisk until everything is combined.
Step Three
Using a spatula or a spoon stir in 1¾ cups of flour, ½ baking soda and ½ teaspoon salt.
Step Four
Using a tablespoon, place rounded tablespoon of the dough on the baking sheet, about 2 inches apart.
Step Five
Bake 8-10 minutes. Immediately remove from cookie sheet to a cooling rack and let it cool for about 30 minutes.
HOW TO MAKE CREAM CHEESE FILLING:
Using a mixer whisk 4 oz softened cream cheese, 6 tablespoons of butter and ½ teaspoons of vanilla extract in a mixing bowl on medium speed until fluffy. Gradually beat in 1½ cups of powdered sugar until light and fluffy.
HOW TO MAKE WHOOPIE PIE COOKIES:
Using a frosting pipe, pipe frosting on one cookie then place another cookie on top. Roll each whoopie cookie in crushed candy cane or a garnish of your choice. Enjoy!

- 6 tablespoons butter softened
- 1/2 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
FOR GARNISH 100% OPTIONAL (pick one)
- crushed candy cane
- chopped nuts
- shaved chocolate
- sprinkles
