This breakfast pizza with hash brown crust is such a simple way to make a complete and satisfying breakfast all in one skillet! It’s also a good excuse to have pizza for breakfast!
This one is made with a crispy gluten-free hash brown crust with a layer of melted cheese on top, which also helps to keep the hash brown together. It’s topped with avocado, tomatoes, green onion, and crispy bacon!
This recipe for breakfast pizza is loaded with healthy fats, protein, and tons of other nutrients, so it’s a great way to give your family a head start first thing in the morning. It’ll keep everyone satisfied up until lunch, and if you’re lucky enough to have leftovers, you can eat it again later for a snack!
If tomatoes and avocado aren’t your thing, feel free to swap the toppings for your favorites! Use breakfast sausage and roasted red peppers instead, or maybe crumbled feta and sun-dried tomatoes. Recipe Ingredients For Pizza Recipe
- Potatoes: I like to peel and grate my own Russet potatoes using either a box grater or food processor. However, you can buy pre-shredded hash browns, but if they’re frozen make sure they’re completely thawed. Whether fresh or thawed, make sure to pat them dry.
- Bacon: Just a few strips of bacon cut into little pieces. You’ll cook them until crispy before you do anything else, so they have time to sit and cool.
- Avocado oil: Added to the skillet with a bit of bacon grease to cook the hash browns. You can use olive oil instead if you prefer. This will help to brown and crisp the potatoes.
- Cheese: Freshly grated sharp cheddar from a block will melt nicely onto the crust. I love the sharp tang in contrast with the creamy avocado but you can swap it with whatever cheese you prefer.
- Avocado: Peel and cube a large avocado. You want it ripe enough so that it’s soft and creamy to eat, but not too ripe that it’s mushy. Best added just before serving so that it doesn’t turn brown.
- Small ripe tomatoes: Juicy, acidic, and zesty! The perfect addition to the topping of your pizza.
- Salt & pepper: To taste.
- Green onion: For garnish.
How to Make Breakfast Pizza
Step 1: Cook bacon in a skillet over medium-high heat for about 5 minutes, stirring occasionally, until the bacon is crispy. Transfer the cooked crumbles to a paper towel lined plate and remove all but 1 Tablespoon of the grease from the skillet.
Step 2: To the same skillet, drizzle grape seed oil (or olive oil) and add the hash brown. Use a spatula to press down the grated potato into the bottom of the skillet, making a single layer of one big hash brown. Season with salt and pepper.
Step 3: Cook the hash brown over medium-high heat for 5-7, undisturbed. Once crispy and golden, carefully flip it to the other side and top with the cheddar cheese. Cook for another 5-7 minutes on the second side until golden and crispy on the bottom as well.
Step 4: Remove the skillet from the heat and add top with avocado, tomatoes, green onion, and bacon. Use a pizza cutter and slice it into triangle slices. Enjoy it while it’s hot!
Recipe Tips
- Use a different meat. Swap the bacon with diced ham, breakfast sausage crumbles, taco meat, or shredded chicken. Or use a combination of a couple of different kinds.
- Make it vegetarian by completely omitting the meat and adding extra veggies. You could even add a layer of scrambled eggs for protein.
- Add extra veggies like sauteed spinach, sundried tomatoes, red bell peppers, mushrooms, etc.
- If you want to ramp up the flavor in your crust you can mix the hash browns in whisked eggs and Parmesan cheese to cook them together at once.
- Switch the cheddar cheese to mozzarella, Monterrey Jack, or spread a layer of Mexican white sauce for extra yummy flavor instead!
How to store leftovers?
Keep any leftovers stored in an airtight container for up to 3 days. If you guessed it would get soggy as it sits in the fridge, you’d be right.
You can reheat it in the microwave but to get that crispy bottom again, use a skillet on the stovetop or the air fryer.

20-Min Cheesy Hash Browns Breakfast Pizza Recipe

- 4-5 russet potatoes peeled & grated
- 3 bacon strips cut into little pieces
- 1 tablespoons avocado oil
- 1 cups sharp cheddar cheese grated
- ½ avocado peeled and cubed
- 2-3 small tomatoes cubed
- salt and pepper to taste
- green onion for garnish
Instructions
HOW TO MAKE HASH BROWNS:
- Place bacon pieces into the non-stick skillet, cook on medium heat for about 5 minutes stirring few times, or until bacon is crispy. Transfer to a plate lined with paper towel.
- Remove the bacon grease, return 1 tablespoon of it back into the skillet. Add 1 tablespoon oil. Add grated potato pressing down to make one big hash brown. Season with salt and pepper to taste, cook on medium heat without disturbing it with a spoon, until crispy golden/brown color, about 5-7 minutes. Carefully flip to the other side, season with salt and pepper and add 1 cup of cheddar cheese on top and cook for 5-7 minutes or until potato is cooked thru and has a beautiful crispy bottom.
HOW TO MAKE BREAKFAST PIZZA WITH CHEESY HASH BROWNS CRUST:
