PINK Raspberry Fool NO BAKE Dessert Recipe
NO BAKE DESSERTS are my favorite! I just love the idea of creating a finger-licking dessert without turning ON the oven. Here is a pinkaliciously delicious, Raspberry Fool Recipe, it is made of blended fresh berries and served with smooth berry cream. It is so good!!! My kids and friends love this fruit dessert. It has lots of fiber and vitamins like vitamin C, vitamin K and vitamin B. In one word this NO BAKE dessert is guilt-free and yummilicious! I guess that was two words ;D What I am trying to say is that you will love this Very Berry Quick and Easy Dessert Recipe.

Ingredients you will need to make this NO BAKE Dessert Recipe:
- 12 oz blueberries, strawberries and raspberries (you can use any berries of your choice)
- 2/3 cup sugar
- juice of 1 lemon
- 2/3 cup heavy whipping cream
- 1/2 cup mascarpone, room temperature (you can also use cream cheese)
- baby mint leaves and fresh berries, for garnish

Step One
Using food processor or blender, purée 12 oz. berries and 2/3 cup of sugar. Using a big spoon strain through a sieve to get rid of the seeds. Add lemon juice from 1 lemon, mix and set aside.
Step Two
In a chilled mixing bowl, whisk 2/3 cup heavy whipping cream until soft peak forms. Take another bowl and whisk 1/2 cup mascarpone or cream cheese until creamy texture. Using spatula fold mascarpone into heavy whipping cream. Add 1/2 of the berry mixture, stir until combined.
Step Three
Pour the berry mixture among 4 cups. Add cream mixture. Garnish with mint and berries. Enjoy!
