Beef Stew “Shurpa” – if you are like me who has super picky eater  husband, who is not going to eat a soup if there is NO MEAT in it, you need to make Beef Soup “Shurpa”.

This Beef Soup Recipe is LOADED with meat and lots of vegetables like carrots, tomatoes, bell pepper and onion.

To make Beef Soup “Shurpa” EXTRA yum, serve it with toasted Artisan Bread with cream cheese spread. Oh boy it’s good!

How to make Beef Stew from Scratch:

In the soup pot add a splash of olive oil and onion, saute on a medium heat until golden color.

Beef Soup "Shurpa" Add meat. Saute meat until it is almost cooked.

…and tomato.IMG_5621Add tomatoes, bell pepper, carrot, tomato paste.

Give it a mix then add water just to cover vegetables and meat then simmer it for 30 minutes.

IMG_5678Add minced garlic and greens. Turn off the heat and let the stew stand for 20-25 minutes.

Serve with toasted Artisan Bread and cream cheese spread. Enjoy!

Ingredients
  

  • 1 1/2 lb beef cut into small cubes
  • 1 1/2 lb potato cubed
  • 1 Medium bell peper cubed
  • 1 Medium carrot grated
  • 1-2 to matoes cubed
  • 1 Medium onion chopped
  • 2-3 cloves garlic
  • 3 tablespoons tomato paste
  • salt and pepper to taste
  • greens
  • Mrs. Dash seasoning optional
  • Olive oil
