How to Make Dairy Free Muffins
Preheat the oven to 350F and line muffin pan with baking cups, set aside.
Using a hand mixer, in a mixing bowl whisk 4 eggs, 1 cup white sugar, 1 cup olive oil and 15 oz. can of pumpkin puree. Whisk until everything is combined.
Using a different bowl, combine 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 teaspoons of pumpkin pie spice.
Add dry ingredient to wet ingredients, whisk using mixer until everything is combined and there are no lumps in the batter.
Pour the batter into the muffin cups.
How Long to Bake Muffins
Sprinkle streusel over the top and bake at 350F for about 25 - 30 minutes, until toothpick comes out clean when inserted into the muffins.
Let pumpkin muffins cool.
Drizzle glaze over the top.

To make streusel topping, in a mixing bowl combine ¾ cup of all-purpose flour, ¼ cup of sugar, ¼ cup of brown sugar, 6 tablespoons of olive oil, 1 teaspoon cinnamon.

- 2 teaspoons baking powder

- 2 teaspoons pumpkin pie spice
Streusel Topping
- ¾ cup all-purpose flour
- ¼ cup sugar
- ¼ cup brown sugar
- 6 tablespoons olive oil substitute with coconut oil, ghee or butter
- 1 teaspoon cinnamon
Glaze For Muffins
- 1 cup powdered sugar
- 1-2 tablespoons almond milk more if needed
