Ingredients YOU will need to make Vanilla Cupcakes:
- 1 & ⅓ cup all-purpose flour
- 2 teaspoons baking powder
- ¼ tsp salt
- ½ cup unsalted butter, melted and cooled
- 1 cup sugar
- 1 large egg
- 1 cup buttermilk/kefir
- 2 tsp organic pure vanilla extract
Ingredients YOU will need to make Vanilla Buttercream Frosting:
- 1½ cup unsalted butter, cold, sliced into cubes
- 5 cups powdered sugar
- 2½ tsp vanilla extract
- 2 tbsp heavy whipping cream
- 2-4 drops of pink food color + 1-3 drops of yellow food color
How to make Vanilla Cupcakes:
Step One
Preheat oven to 350F. Line a muffin pan with 12 white cupcake paper liners.
Step Two
In a mixing bowl combine 1 & ⅓ cup flour, 2 teaspoons of baking powder and ¼ teaspoon salt. Mix and set aside. In 2nd mixing bowl whisk ½ cup melted butter with sugar. Whisk in 1 egg, 1 cup kefir and 2 teaspoon vanilla extract.

Step Three
Pour wet ingredients into dry ingredients, whisk until combined, don’t over mix. Using greased ¼ measuring cup, divide the batter among the 12 muffin cups. Bake on the middle rack for 20-22 minutes, or until the toothpick comes out clean when inserted in the middle of the cupcake. Let cupcakes cool before frosting them.
How to make Vanilla Butter Frosting:
Step One
Using a stand mixer with paddle attachment, whip 1½ cup of cold butter for about 5 minutes, scraping butter down few times. Whip until butter turns into lighter color.
Step Two
Add 2 cups of powdered sugar, mix until combined, again scraping down the frosting. Pour in 2½ teaspoons of vanilla extract, whip until combined.

Step Three
Add 3 cups of powdered sugar, whip until combined, add 2 tablespoons of whipping cream & pink & yellow food coloring, whip the frosting for about 5 more minutes. Now it is ready to frost those cupcakes.
Place the frosting in the piping bag. Pipe swirling roses on top (decorating cupcakes is my weakness and require more practice as YOU can see, maybe I should take cake decorating classes, what do YOU think?).
To make Mother’s Day Gift Basket You will need:
basket
cabbage
toothpicks
cupcakes
green leaves
baby breaths
Step One
Place the cabbage in the middle of the basket.
Step Two
Cover the cabbage with wax paper and then insert toothpicks. Place cupcakes on top of the toothpicks.
Step Three
Decorate with green leaves and baby breaths. Woala!
