If you love chocolate you'll love this brittle recipe! Chocolate is my weakness so I couldn't help but add it in for a rich smooth flavor after that perfect toffee crunch.
What You'll Need to make Microwave Brittle:
- 1 cup sugar
- ½ cup honey
- 1 ½ cup roasted peanuts (or your choice of nuts)
- 1 tbs butter
- 2 teaspoon vanilla extract
- 1 teaspoon baking soda
- 8 oz chocolate semi-sweet
How to Make Peanut Brittle in the Microwave
Step 1: Combine sugar and honey microwave safe bowl. Microwave for about 5 minutes. Through out the 5 minutes in the microwave keep a watchful eye on the on mixture as it can start to puff and you need to stir and continue microwaving. After add peanuts and microwave for 4 more minutes.
Some Microwaves are different and might cook the candy faster. You'll know the mixture is ready once it reaches 300F degrees ( the hard crack stage).
Quickly stir in the butter, vanilla and baking soda until the candy mixture become light and fluffy.
Step 2: After, using a brownie pan add parchment paper and spray oil so brittle doesn't stick to the paper, pour brittle mixture in. Spread the mixture using spatula.
Step 3: Melt the chocolate in the microwave for 1 minute in 30 second intervals, stirring between.
Then spread it over the brittle and sprinkle chopped peanuts over the top. Let cool in the refrigerator for 30 minutes or until hard. Break it up and serve.
For storage. Stack in airtight container with waxed paper in between the layer.
