Flatbread Pizza Recipe - Learn to make a thin, chewy flatbread pizza topped with zesty tomato sauce, fresh basil, and three kinds of melty cheese in a few simple steps and just 45 minutes of rise time!
Whether you love a simple and classic cheese pizza or you load yours up with all the toppings, a really good flatbread pizza is all about the crust!
This flatbread pizza recipe is one of my favorite ways to feed my family quickly, and not just on pizza night. The homemade crust is chewy, slightly crispy, and rises to the perfect flatbread height. You’ll love it!
Why You’ll Love This Recipe
- It’s great as an after school snack, cut small into appetizer bites like these sourdough pizza rolls, or as a main meal on movie night.
- The flatbread crust made from scratch is so easy to make with a handful of simple ingredients.
- You can choose to make it a cheese flatbread like I do or get creative with your flatbread pizza ideas!
Tips for Homemade Pizza with Flatbread
- Roll the dough out to as thick or as thin as you’d like your pizza crust. It’s flatbread, so it shouldn’t be a deep dish pizza!
- I like to add a few leaves of fresh basil on top once the pizza is out of the oven.
- Use store-bought flatbread or Naan bread in a pinch. There’s nothing like homemade crust, but when you are trying to get dinner on the table and the kids out the door, a pre-made crust is just fine.
- Get the kids to help! They’ll love adding their own toppings!
Possible Topping Ideas
There are limitless possibilities when it comes to topping your flatbread pizza recipe. Here are just a few different ideas to get you started.
- Keep it simple and with just a little oil, garlic, and sea salt. Sprinkle some Parmesan cheese and Italian seasoning just before serving.
- You can add different veggies like mushrooms, peppers, olives, red onions, caramelized onions, arugula, or spinach.
- Top it with pepperoni, Italian sausage, chicken, bacon, or your favorite meat.
- Pick different cheeses; goat cheese goes great with arugula and sundried tomatoes, you could also do blue cheese and caramelized onions.
Ingredients for Flatbread Pizza Recipe
- Yeast: You can use either active dry yeast or instant yeast for this recipe. If using active dry yeast, you’ll just need a few extra minutes to proof it first.
- Sugar: Yeast feeds on sugar and helps activate it. The sugar also lends a little sweetness to the dough for extra flavor.
- Avocado oil: Adds moisture to the dough.
- Water: Use warm water between 100-110°F (38-43°C) to activate the yeast. Any colder and the yeast won’t do anything; any hotter and it will kill it!
- All-purpose flour: Measure the flour accurately so you’re not using too much of it. You’ll also need some extra for your hands and to sprinkle on your work surface.
- Salt: A flavor enhancer.
- Pizza sauce: Use your favorite sauce, whether homemade or store-bought.
- Cheeses: The best cheese on pizza has to be mozzarella, but I also love to use a combination of provolone, mozzarella, and Parmesan cheese.
- Tomato: Slices of tomato are an acidic, zesty topping that goes great with cheese and fresh basil.
- Fresh basil: There is nothing better than fresh basil on a simple cheese pizza.
- Italian seasoning: Just a bit sprinkled on before baking for added taste.
How to Make Flatbread Pizza
Step 1: Proof the yeast by combining the yeast, sugar, oil, and warm water in a bowl. Stir gently and then let it sit for a few minutes. It should start to foam. If it does nothing, it means your yeast is no longer active and you’ll need to start again with fresh yeast.
Step 2: Once foamy, add the flour and salt into the mixture and mix to combine. Then, knead the dough for 6–8 minutes. You can do this in the bowl of a stand mixer with the dough hook attachment if preferred.
Step 3: Cover the bowl with plastic wrap or a clean kitchen towel and let it rise for 45 minutes.
Step 4: When the dough has expanded and has had a chance to rise, transfer the ball of dough to a clean work surface. Divide the dough evenly in half and then roll each one out into an oval shape.
Step 5: Place the rolled out dough onto a parchment-lined baking sheet or a large, greased cast iron skillet.
Step 6: Spread the sauce over each one, followed by the cheeses, tomato slices, fresh basil leaves, and Italian seasoning. Bake in a preheated 475°F oven for about 13-15 minutes.
Step 8: Let the flatbread pizzas cool slightly, and then slice them into pieces or serve them whole. Enjoy with a Caesar salad on the side!
Recipe FAQs
Flatbread pizza has a crust that is typically flatter than your average pizza crust. Sometimes it’s made without yeast; however, we make ours with yeast. We roll out our leavened dough thin enough so that when it rises, the crust isn’t too thick.
Keep leftovers in the fridge for up to a week.
You can! Once it has had a chance to rise, punch it down to get rid of the air. Then, divide the dough into two equal parts and wrap them in plastic wrap.
Freeze the dough for up to 3 months.
Then, when you’re ready to use it, thaw it in the fridge overnight and then bring it to room temperature for at least an hour. Maybe longer if you notice it shrinking every time you try to stretch it out.

3 Cheese Flatbread Pizza Recipe
Equipment
Ingredients
Flat Bread Crust
- 1 teaspoon active dry yeast or instant yeast
- 1 teaspoon sugar
- 1 tablespoon olive oil
- ¾ cup water warm between 100-110°F, 38-43°C
- 2 cups flour (250g)
- 1 teaspoons sea salt
Flat Bread Pizza Toppings
- 1 cup pizza sauce or to taste
- 2 cups cheese provolone, mozzarella and Parmesan cheese, or to taste
- 2 medium tomatoes sliced, or to taste
- 2 tablespoons fresh basil sliced, or to taste
- 2 teaspoons Italian seasoning or to taste
Instructions
- To make the dough, start by whisking together the yeast, sugar, oil, and warm water in a stand mixer bowl. Let the mixture sit for about 5-10 minutes until it becomes frothy. Then, add the flour and salt, and mix until a shaggy dough forms. Knead the dough using a hook attachment for 8 minutes.
- Once the dough is kneaded, place it in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 45 minutes or until it has doubled in size.
- After the dough has risen, punch it down and divide it into 2 equal portions. Roll each portion into an oval shape and place them onto a baking sheet lined with parchment paper.
- Now, it's time to assemble the flatbread. Spread your favorite pizza sauce over the dough, sprinkle a generous amount of 3 kinds of shredded cheeses, add sliced tomatoes, and scatter some fresh basil leaves on top. Finally, give it a sprinkle of Italian seasoning for extra flavor.
- Preheat your oven to 475°F (245°C) and bake the flatbread on a baking sheet for about 13-15 minutes, or until the crust is golden and the cheese is bubbly and melted.
- Once it's done, take it out of the oven, garnish with fresh basil leaves, slice it up, and enjoy your delicious homemade flatbread!
Notes
- Go for the good stuff - fresh mozzarella, tasty tomato sauce, and some fragrant fresh herbs will really make a difference.
- When topping your flatbread, just remember not to go overboard. Too many toppings can make it soggy, so let's keep it balanced and delicious!
- Get playful and have a fun experimenting with different flavors for your homemade pizza!
