Ingredients You'll Need
Don't let the three layers fool you! These no-bake cookie dough protein bars are surprisingly simple to make.

For the Cookie Dough Base
- Almond flour: Gives the bars that soft, cookie dough texture without needing to bake them.
- Protein powder: Vanilla protein powder works!
- Sunflower seed butter: Makes the dough creamy and helps hold everything together.
- Maple syrup: Adds just the right amount of sweetness.
- Vanilla extract: Gives the dough that classic chocolate chip cookie flavor.
- Sea salt: A little salt helps balance all the sweetness.
- Almond milk: Helps bring the dough together. Add it slowly because every protein powder absorbs liquid differently.
- Chocolate chips: I love using dark chocolate for that rich chocolate flavor, but milk or semisweet chocolate works too! Use whichever you love most.
Speaking of chocolate chip cookies, if you're in the mood for the real baked version, my Best Giant Chocolate Chip Cookies are loaded with chocolate chips and walnuts. They're perfect when you want a warm, gooey cookie!
For the Date Caramel
- Medjool dates: These are the secret to that thick, sweet, caramel-like center! Look for soft, sticky dates for the smoothest texture.
- Sunflower seed butter: Makes the caramel extra creamy.
- Hot water: Helps blend everything into a smooth, spreadable consistency.
- Vanilla extract: Adds a little extra flavor.
- Sea salt: Balances the natural sweetness of the dates.
For the Chocolate Topping
- Dark chocolate chips: Melt into a rich chocolate layer that firms up beautifully in the freezer.
- Coconut oil: Helps the chocolate melt smoothly and gives the topping that delicious snap.
- Flaky sea salt: Optional, but I wouldn't skip it! That little bit of salt with the chocolate is SO good.

How to Make Cookie Dough Protein Bars
These homemade cookie dough protein bars come together in three easy layers. The hardest part? Waiting for everything to freeze!
Step 1: Make the Cookie Dough

In a medium mixing bowl, combine the almond flour, protein powder, seed butter, maple syrup, vanilla extract, and sea salt.
Add the almond milk, one tablespoon at a time, mixing until a thick cookie dough forms.
You want the dough to be soft enough to press into the pan but firm enough to hold together.

Fold in the mini chocolate chips.
Step 2: Press Into the Pan
Line an 8-inch baking pan with parchment paper, leaving some hanging over the sides so you can easily lift the bars out later.

Transfer the cookie dough mixture to the pan and press it into an even layer.
Place the pan in the freezer for 15 minutes while you make the caramel.
Step 3: Make the Date Caramel

Add the pitted Medjool dates, seed butter, vanilla extract, sea salt, and 1 tablespoon of hot water to a food processor.
Blend until smooth and creamy, scraping down the sides as needed.
If the caramel is too thick, add a little more hot water until it's easy to spread.
Expert tip: If your dates are a little dry, soak them in hot water for about 10 minutes before blending. Just drain them first!
Step 4: Add the Caramel Layer
Remove the cookie dough base from the freezer.
Spread the date caramel evenly over the cookie dough using a spatula.
Pop it back into the freezer for another 20 minutes.
This helps keep those beautiful layers separate when you add the chocolate!
Step 5: Melt the Chocolate
Add chocolate chips and coconut oil to a microwave-safe bowl.

Microwave in 20-second intervals, stirring between each one, until the chocolate is melted and smooth.
Let it cool slightly before pouring it over the caramel.
Step 6: Add the Chocolate Topping

Pour the melted chocolate over the chilled caramel layer and gently spread it into an even layer.

Sprinkle with flaky sea salt.
Place the pan back in the freezer for about 20–30 minutes, or until everything is firm.
Step 7: Slice and Enjoy!
Lift the bars out of the pan using the parchment paper.

Let them sit at room temperature for a few minutes, then slice into squares or bars using a sharp knife.
And that's it!
You've got soft cookie dough, gooey date caramel, and a crunchy chocolate topping all in one delicious bite.
Seriously, SO good straight from the freezer!
My Best Tips for Perfect Cookie Dough Protein Bars
Here are a few things to keep in mind when making these bars.
- Use soft Medjool dates. They blend much more easily and give the caramel that smooth, creamy texture.
- Don't add too much milk. Start with one tablespoon and add more only if needed. You want thick cookie dough, not batter.
- Press the cookie dough firmly. This helps the bars hold together when slicing.
- Freeze between layers. Trust me, it's worth the extra waiting time!
- Use a warm knife for slicing. This helps prevent the chocolate topping from cracking unevenly.
Easy Substitutions and Variations
One of the things I love about homemade snacks is that you can switch things up depending on what you have in your kitchen.

- Different protein powder: Vanilla protein powder works beautifully, another delicious flavor is maple cinnamon. Just remember that some protein powders are sweeter or absorb more liquid than others.
- Seed butter: If you love chocolate and peanut butter together, try using creamy peanut butter instead of seed butter.
- Different chocolate: Use semisweet chocolate chips for a sweeter topping or extra-dark chocolate for something a little richer.
- Dairy-free: Choose dairy-free chocolate chips and plant-based protein powder.
- Extra crunch: Try adding a few chopped almonds to the cookie dough layer.
How to Store Cookie Dough Protein Bars
These bars are perfect for making ahead, which is one of my favorite things about them!
Refrigerator
Store the bars in an airtight container in the refrigerator for up to 5 days.
The cookie dough and caramel will be a little softer than when frozen, but still delicious.
Freezer
Place the sliced bars in an airtight freezer-safe container with parchment paper between the layers.
For the best flavor and texture, enjoy them within 2 months.
I like to take one out of the freezer and let it sit for a minute or two before eating.
That chocolate topping gets nice and crunchy, while the cookie dough and caramel stay soft and chewy.
It's like having your own little homemade frozen candy bar!
Frequently Asked Questions
These bars are made with ingredients like almond flour, seed butter, dates, and protein powder. They provide a combination of protein, fats, and carbohydrates. The exact nutritional values depend on the ingredients and brands you use.
You can try replacing the protein powder with additional almond flour, adding a little at a time until the dough holds together. The flavor, texture, and protein content will be different.
Nope! Since we're using almond flour instead of regular raw wheat flour, there's no baking required. Just be sure to use protein powder and other ingredients intended to be eaten without cooking.
Your dates might be a little dry. Add another small splash of warm water and blend again until smooth.
Absolutely! That's actually my favorite way to eat them. Just let them soften for a minute or two if they're too firm.
They can be! Almond flour is naturally gluten-free, but make sure your protein powder, chocolate chips, and other packaged ingredients are certified gluten-free if needed.
