Hey but at least you know what you can make with your Thanksgiving Leftovers.  Use your leftover mashed potatoes and turkey meat, to create this yummy chicken gnocchi soup.

I don’t know about you but after eating so much goodness on Thanksgiving day I always crave a good homemade soup.

Creamy chicken soup with delicious homemade gnocchi and yummy spices, and finely grated Parmesan Cheese. Lots of CHEESE! You will love this soup!

How to make Gnocchi using Mashed Potatoes?

First, in a mixing bowl combine flour, Kosher salt, and ground nutmeg. Stir to combine.

Then, to the flour mixture add mashed potatoes and egg. Mix, then knead with your hands until it turns into a nice ball of dough.

Now grab 1/2 teaspoon of dough and roll it between your palms to form a ball, then using your finger press each gnocchi down. After all of the gnocchi is made, you can start cooking the chicken gnocchi soup recipe.

How to make Chicken Gnocchi Soup?

First melt butter & olive oil in a big soup pot, over medium heat.

Add grated carrots, chopped onion, chopped celery and minced garlic, saute for about 3 minutes, stirring few times.

Meanwhile, combine chicken broth with cornstarch, whisk to combine. Pour the broth mixture into the pot and bring it to a boil. Once the broth is boiling add gnocchi, ground nutmeg, dried thyme, salt and pepper to taste. After it starts boiling again reduce to medium/low heat and simmer for about 10 minutes, stirring few times.

Pour in half and half and simmer for 15 minutes, stirring few times.

Lastly add chopped turkey or chicken meat and chopped spinach, simmer for 10 more minutes. Serve warm with Parmesan Cheese & dinner rolls. Enjoy!

  • 1 tablespoon butter
  • 1 tablespoons olive oil
  • 1/2 cup carrot shredded
  • 1/2 cup onion diced
  • 1 stalk celery diced
  • 1 teaspoon minced garlic
  • 2 tablespoons cornstarch
  • 6 cups chicken broth
  • salt and pepper to taste
  • 1/8 ground nutmeg
  • 1/2 teaspoon dried thyme
  • 2 cups half & half
  • 2 cups of left over turkey or cooked/roasted chicken meat chopped
  • 1 cup of fresh spinach chopped
  • parmesan cheese for garnish optional

    Overall very good & a hit with the family. Easy to make & instructions were clear. Last minute I felt like it needed a little something so I added about a cup of good grated Parmesan cheese.
