  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 Organic chicken breasts, boneless & skinless, fat removed
  • 1 medium size onion, chopped ( I used 1/2 of a large onion)
  • 1 teaspoon dry herbes de Provence
  • 2 garlic gloves, finely chopped
  • salt and pepper to taste
  • 1 cup hot chicken broth ( I used homemade chicken broth)
  • 1/2 cup white cooking wine
  • 1 cup heavy whipping cream
  • 1/2 teaspoon dry tarragon or 2 tablespoons freshly chopped tarragon
  • grated Parmesan cheese for serving

Step One

In a cooking pan on a medium/high heat, melt 2 tablespoons of butter with 1 tablespoon olive oil. Add chicken breast and cook for 3-5 minutes or until golden brown.

Add chopped onion, sprinkle 1 teaspoon herbes de Provence, 2 finely chopped garlic cloves, salt and pepper to taste. Cook for 3 minutes.

Step Three

Add 1 cup of chicken broth and 1/2 cup white cooking wine, bring it to a boil.

Transfer chicken breasts to a plate. Turn the heat on high and boil the sauce until reduced by half. Stir in heavy whipping cream and 1/2 teaspoon dry tarragon. Boil until thickened. If it becomes too thick add more chicken broth and adjust the salt and pepper to taste.

    Made this tonight. Did not have Herbs de Province so used Italian seasoning, and I used fresh tarragon from my garden instead of dried. This was so easy to make, quick, and delicious! My husband loved it too! Thank you. 😊
