Chicken Thighs and Shrimp Paella Recipe
Ingredients
- 4 chicken thighs
- 1 lb shrimp peeled and deveined
- 2 tablespoon olive oil
- 1 small onion chopped
- 2 cloves garlic minced
- 1 tomato cubed
- 1 teaspoon smoked paprika
- 4 cup hot chicken broth
- 1/4 teaspoon Saffron crushed
- 1 1/2 cup Paella rice short grain rice (washed)
- 1/4 cup frozen peas
- salt and pepper to taste
- parsley to garnish
Instructions
- Season chicken thighs with salt and pepper. Add olive oil to Paella pan, fry chicken on a medium high heat, until brown on both sides, about 15minutes total.
- Add onion, saute until translucent color about 3-5 minutes.
- Turn the heat to medium low, add garlic, saute for 1 minute.
- Add tomato and paprika, saute for 2 minutes.
- Add hot chicken broth and saffron, bring it to a boil.
- Add rice, turn the heat to medium high and boil it uncovered for 17 minutes.
- Add shrimp and peas, boil it uncovered, on medium high heat for another 3 minutes.
- Cover with foil paper or lid and let Paella rest for 5 minutes.

I may have missed this but how much smoked paprika is used?
1 teaspoon of smoked paprika.
This is actually a great recipe. I added lots of white wine, an orange bell pepper, and tumeric. Also had to add garlic and onion powder. Those additions added lots of flavour!
The flavor profile here is spot on, easy recipe to follow, just awesome! Now I have ordered a real paella Pan & rice; I used a large deep skillet with Arborio & it was fine.
I think I can add 2 more thighs with a 15” pan; I did add Chiorzo. Thank you!

I brought back smoked paprika & saffron from Spain & with the tour by coach we did have paella & it was good but somewhat bland/ just me.

My husband and I say this was the best dinner I ever made. And in the middle of a quarantine! I was googling for paella recipes that had shrimp and chicken thighs, cuz that’s what was in my freezer. I followed the recie pretty much exactly (which is difficult for me) I was worried it would burn on the bottom. It was the perfect paella crust! The proportions and flavours are perfect. The only changes I did was added one 8″ sliced sausage with the onions and 1/2 red pepper. THank you a million times for a special time during a stressful time. Peace and health to all.

I couldn’t find “paella” rice but did find a short grain rice. Thankfully, I read the bag because the majority of short grain rice requires 45 minutes to cook and at least 10 minutes to steam. Something to consider when cooking this recipe. Also, add chorizo it’ll boost the flavor in a great way. This recipe had great taste just took almost twice as long to cook as I anticipated.
