My family loves chicken nuggets from the fast food restaurants, even tho we don't eat there often. One day, I had this awesome school lunch idea that came to my mind.
Make bunch of baked chicken nuggets and freeze them so I can warm them up and put them in the school lunch box. It will be one of those easy school lunch ideas that my child will devour.
I am one of those moms who loves to cook almost everything from scratch, except macaroons, I rather buy them at the Fred Meyer Store, than waste ingredients making this dificult but super delicious dessert. You see those little cookies never turn out right when I bake them.
What I am trying to say is this, if you want to safe time and frustration you can always go to the store like Fred Meyers Store, and buy things that you love.
Now, back to this scrumptious baked chicken nuggets recipe. You might think they are super hard to cook, but in reality they are absolutely easy to make.
This is one super easy chicken nuggets recipe. The chicken breast is cut into bite size pieces and marinated in the mayo & pickled juice, coated in seasoned flour and baked until golden color.
They taste incredible, specially if you let the chicken marinate over the night, or more than 1 hour.
These homemade chicken nuggets taste amazing with honey mustard sauce.

Ingredients for Baked Chicken Nuggets Marinate:
- 1½ lb Simple Truth Organic boneless, skinless chicken breasts, cut into 1-inch chunks
- ½ cup Fred Meyer Mayonnaise
- 1 cup Kroger Kosher Dill pickle juice
- 1 teaspoon McCormick Montreal Chicken Spice
Ingredients to make Homemade Chicken Nuggets:
- 1 cup whole milk
- 1 large egg
- 1¼ cups all-purpose flour
- 1 tablespoon powdered sugar
- salt and black pepper, to taste
- peanut oil, for frying - optional - see the instructions
Ingredients for Honey Mustard Sauce:
- ¼ cup Fred Meyer Mayonnaise
- 2 tablespoons honey
- 1 tablespoon mustard
- 1 tablespoon Simple Truth Organic Dijon Mustard
- ½ tablespoon lemon juice, freshly squeezed

To make Honey Mustard Sauce:
- In a small bowl whisk ¼ cup mayo, 2 tablespoons honey, 1 tablespoon mustard, 1 tablespoon Dijon mustard, and ½ tablespoon lemon juice. Set aside.
How To Make CHICKEN NUGGETS:
- In a mixing bowl, combine 1½ lb of chicken, ½ cup of mayonnaise, 1 cup of pickle juice and 1 teaspoon of Montreal Chicken Spice. Add chicken and marinate for at least 30 minutes or over night. Drain the marinate.
- In a large bowl, whisk together 1 cup milk and 1 egg. Using another mixing bowl, combine 1¼ cup of flour and 1 tablespoon powdered sugar. Season with salt and pepper, to taste.
- First dip the chicken pieces into the milk mixture then into the flour mixture.
How to Cook Chicken Nuggets - 2 Ways:
- Preheat the oven to 350F and line a baking sheet with a parchment paper. Quick Tip - spray the parchment paper with oil, it helps baked chicken nuggets not to stick to the paper. Place chicken nuggets on a baking sheet and bake for 20-35 minutes, or until chicken is cooked thru. 3 minutes before chicken nuggets are done cooking I like to broil them on high for about 3 minutes.
- Preheat the skillet with about 1 cup of oil (like peanut oil or avocado oil), add chicken and fry until golden color about 2-3 minutes. Serve warm with honey mustard sauce.
