Quick Notes
- These dumplings/pelmeni are freezer friendly, place raw dumplings on a floured cutting board and freeze until frozen, then place them in a zip bag and freeze until you get hungry.
- Cook just like you would cook the freshly made dumplings.
How to Make Dumplings Dough aka Pelmeni Dough:
First, using a stand mixer bowl add 3 cups of flour and 1 teaspoon of sea salt, mix.
Next, add 1 egg and ¾ cup of water, knead into a dough using a hook attachment (you can totally knead by hand too). If dough looks dry add more water up to ¼ cups, if dough is too wet add more flour up to ¼ cup of flour.
Knead dough for 5 minutes, then place it in a floured plate and cover it. Set aside and let rest while you make the pelmeni filling.
How to Make Pork Dumplings Filling:
Next, using food processor or a knife, finely chop 1 small onion and 1 clove of garlic.
In a mixing bowl, combine ½ lb of ground beef and pork, 1 teaspoon of Meat Seasoning, salt and pepper to taste. Add it to the bowl with ground meat. Now, using hands mix everything together.
How to Make Pork Dumplings:
To make pork dumplings, divide the dough into 4 equal pieces. Take 1 piece of dough and cover the rest with plastic wrap, roll out the dough into a large circle ⅛ inch thick.
Using a 2 inch cutter or glass cup, cut dough into circles. Next, place about 1 teaspoon of filling in the middle of the circle, fold in half and seal the ends together using fingers, then bring two ends together and pinch and seal to make a dumpling.
Place each dumpling onto a floured surface. Repeat until filling and dough is gone. When half way done, bring a large pot of water with 1 tablespoon of salt to a boil.
How to Cook Dumplings:
Place half of the dumplings into the water and bring it to a boil, stirring few times. Once dumplings starts boiling reduce to medium heat and simmer for about 5 minutes or until the filling is cooked thru, stirring few times.
Finally, using a slotted spoon remove pork dumplings onto a plate and immediately add butter, then stir. Serve with a sprinkle of black pepper, sour cream and a splash of white vinegar (vinegar is totally optional, it is my favorite tho with these Russian Dumplings). Enjoy!
