Why You'll Love These Oven Baked Chicken Thighs
- Only 3 ingredients: Chicken thighs, brown sugar, and Italian dressing mix—that's it!
- Quick and easy: You only need about 5 minutes to get the chicken ready for the oven.
- Juicy chicken thighs: Boneless skinless chicken thighs stay tender and juicy as they bake.
- Sweet and savory: The brown sugar caramelizes while the Italian seasoning adds plenty of savory flavor.
- Family favorite: This is one of those easy chicken dinners everyone can enjoy, even on a busy weeknight.
Ingredients for Oven Baked Chicken Thighs
One of the things I love most about this recipe is how much flavor you can get from only three ingredients.
- Boneless skinless chicken thighs: Chicken thighs are perfect for baking because they stay tender and juicy. Try to choose thighs that are fairly similar in size so they finish cooking around the same time.
- Brown sugar: This is what gives the chicken that irresistible sweet-and-savory flavor. As it bakes, the sugar melts into the seasoning and creates a caramelized coating.
- Italian dressing mix: A packet of dry Italian dressing seasoning gives us lots of flavor without needing a long list of individual spices.
Munchkin Time Tip
Pat the chicken thighs very dry with paper towels before seasoning them. This helps the brown sugar mixture stick to the chicken instead of sliding off into the baking dish.
How to Make Oven Baked Chicken Thighs
These chicken thighs couldn't be much easier. A few minutes of prep and the oven does the rest!
Step 1: Preheat the oven.
Preheat your oven to 425F. Prepare your baking dish or sheet pan by lining it with parchment paper.
Step 2: Dry the chicken.
Pat the chicken thighs really well with paper towels. Removing excess moisture helps the seasoning mixture stick better.

Step 3: Make the seasoning.
Add the brown sugar and dry Italian dressing mix to a bowl and stir until combined.

Step 4: Coat the chicken.
Add the chicken thighs and coat each piece generously with the brown sugar mixture, making sure you get seasoning on all sides.

Step 5: Arrange and bake.
Place the seasoned chicken thighs in your prepared baking dish in a single layer. Bake for 20-25 minutes, until the chicken is cooked through.

Step 6: Check for doneness.
Chicken is safe to eat when the thickest part reaches at least 165°F on an instant-read thermometer.
Step 7: Rest and serve.
Let the chicken rest for about 5 minutes before serving. Spoon some of those delicious pan juices over the chicken and enjoy!
Tips for the Best Baked Chicken Thighs
- Pat the chicken dry. This is especially important in this recipe because excess moisture can prevent the brown sugar mixture from sticking properly.
- Use similar-sized chicken thighs. They'll cook more evenly and should finish around the same time.
- Don't overcrowd the pan. Arrange the thighs in a single layer rather than stacking them.
- Use a meat thermometer. Size and thickness vary, so temperature is a better indicator of doneness than cooking time alone. Chicken should reach at least 165°F.
- Let the chicken rest. Give it about 5 minutes before cutting into it.
- Don't throw away those pan juices! Spoon a little over the chicken before serving for even more flavor.
Substitutions & Variations
Can I use bone-in chicken thighs?
You can, but the baking time will be longer than for boneless thighs. Use an instant-read thermometer to check for doneness.
Can I use skin-on chicken thighs?
Yes, although the final texture will be different. If using skin-on thighs, keep the skin facing up while baking.
Can I use chicken breasts?
You can, but chicken breasts are leaner and can dry out more easily. Cooking time will depend on their thickness, so check them with a meat thermometer.
Can I use dark brown sugar?
Yes. Dark brown sugar will give the chicken a slightly deeper molasses flavor. Either light or dark brown sugar can work.

Frequently Asked Questions
Cooking time depends on the size and thickness of your chicken thighs and the oven temperature.
Follow the timing in the recipe card as your starting point, but always check doneness with a meat thermometer.
Chicken is safe to eat once it reaches an internal temperature of 165°F in the thickest part.
The chicken may have had too much surface moisture. Pat the thighs thoroughly dry with paper towels before coating them with the brown sugar and Italian dressing mixture.
You can measure and mix the dry seasoning ahead of time. Because this recipe takes only a few minutes to assemble, I prefer coating the chicken shortly before baking.
Allow the chicken to cool and transfer leftovers to an airtight container. Refrigerate promptly and enjoy within 3–4 days.
I like adding some of the leftover pan juices before reheating. Heat just until the chicken is hot throughout rather than continuing to cook it longer than necessary.

Tara
I can’t figure out what happened. At the end of the 20 minutes the chicken was done but was bare. The coating had all melted off and was in one large burned puddle in the baking pan. It was just plain baked chicken thighs. None of the coating stayed on the chicken at all. Any ideas?
Love Keil
Oh no — I’m sorry that happened! 😕 When the coating melts off and burns, it’s usually because the chicken was a bit wet or the seasoning mixture was too thin. Next time, try patting the chicken very dry first and mixing the seasoning with a small amount of oil so it sticks better. If your oven runs hot, lowering the temp slightly can help too. Hope this is helpful.

Sydney
This recipe was a HUGE hit with my family! Both our girls wanted seconds, I made 10 boneless skinless chicken thighs with roasted potatoes and roasted carrots. My husband loved it! Though, I cooked mine on my indoor smokeless grill but the brown sugar burned sort of. Might have to just cook them in the oven next time! 10/10 would recommend!! Thank you for this recipe!

Oh wow, that sounds like such a delicious family feast, Sydney! I love hearing that the girls went back for seconds, that’s the best kind of compliment.
Indoor smokeless grill sounds super convenient, but yeah, sugar can be a little tricky with direct heat like that. Baking them in the oven next time sounds like a perfect plan to get that sweet caramelization without the burn.
Thanks so much for sharing your experience and the 10/10 recommendation! You just made my day! 😊🍗✨
