This recipe for fried rice with egg is as simple as it is delicious. It’s quick and easy and a great way to get dinner on the table in a hurry. Serve it as a main dish for meatless Monday or enjoy it on the side of Teriyaki Chicken or Honey Soy Chicken Thighs!
It’s a vegetarian meal complete with grains, veggies, and protein, however, you can definitely add meat to it if you like, like chicken, shrimp, or pork. Fried rice with green onions is a versatile recipe that can be adjusted to suit your needs. Want more veggies? Add them in! Like a little fish sauce or sesame oil? Drizzle some on there.
That’s the beauty about skipping takeout and making a homemade version, you get to control what goes in and what stays out! This is better than even your favorite Chinese restarant and when you’re avoiding high sodium and a ton of preservatives, you can taste the the difference in freshness!
I prefer to keep this fried rice with egg and green onion simple with soy sauce and a bit of salt and pepper to taste. Sometimes simple is best and I think this is one of those times!
Ingredients Needed
- Olive oil and butter: I like using both together because the oil helps keep the butter from browning and the butter makes it taste better.
- Garlic: Minced garlic infused into this dish is what gives it an aromatic flavor.
- Rice, cooked: Best to use cold, cooked Japanese or Jasmine rice so the rice grains don’t end up clumped together when sautéed. Leftovers are perfect for this dish.
- Eggs: We use 6 of them in this recipe for texture, flavor, and protein.
- Salt & pepper: To taste.
- Soy sauce: You can adjust the amount as needed. Use low sodium, if desired. This classic chicken stir fry ingredient adds a salty umami flavor and a dark color to it, adding the Asian-inspired flavors.
- Green onion: For texture and a pop of color!
How to Make Fried Rice with Egg
Step 1: In a large skillet, heat olive oil and butter over medium heat, and fry the minced garlic until golden. You want to cook everything at high heat so that it fries rather than steams.
Step 2: Toss in the cooked rice and season with black pepper. Stir continuously, so the rice cooks evenly.
Step 3: Make a ring around the edges with the rice and clear the middle of the skillet. Crack the eggs into the center and stir them with the rice. As you whisk, begin to gather the rice until they are incorporated.
Step 4: Pour in the soy sauce and continue to stir, making sure everything is coated evenly.
Step 5: Finally, add in the chopped green onion, give it one last stir, and remove from the heat.
Serve immediately on its own or as a side dish. Enjoy!
Top Tips
- Use leftover rice. When it hits the heat it won’t steam up and become mushy or clumpy. You can use cold or not, but as long as it’s not fresh that’s the texture you want. Day old!
- Easy clean-up. I prefer to crack the eggs right into the pan. If that’s not your jam, you can definitely crack them into a bowl first and then add them in. Sometimes this is helpful if you usually have shells to remove first.
- The oil. As I said, I use olive oil and butter because I love the flavor that butter gives off, but if you want a more authentic flavor profile you can swap it with sesame oil. Toasted sesame oil is even better!
- Add veggies. If you want to add some veggies into your stir-fried rice with egg, you can toss in some mixed frozen already cooked veggies. No need to thaw them first. Add them just before the eggs.
What to Serve with this Easy Fried Rice
This versatile dish can be paired with so many things! When preparing an Asian-inspired dinner menu think about adding a couple of the dishes below.
With a seafood dish like this honey glazed salmon, Bang bang shrimp, or some honey garlic shrimp with broccoli.
You could also enjoy it with air fryer chicken wings, honey soy chicken thighs, or this easy teriyaki chicken!
For a quick and simple dinner, sometimes we’ll have it as a main with either a side salad or nothing at all. Well, maybe just an extra drizzle of soy sauce!

I love your recipe. Made quite a few changes. I made this for just myself. I didn’t have jasmine rice, used long grain white rice. Halved pretty much everything. It was delicious!
