    Cherry Tomato Salad - A super simple salad that comes together in minutes and is bursting with flavor! It’s made with fresh ripe cherry tomatoes coated in a chimichurri sauce dressing and the perfect salad to bring to potlucks or to serve as a side dish all summer long!

    This refreshing and easy cherry tomato salad makes the perfect light lunch or side dish for any grilled meat! It’s bursting with fresh juicy tomatoes, a vibrant homemade chimichurri sauce, and a bit of seasoning to taste!

    It’s such a quick and easy salad to throw together when you need a last-minute side dish or you want something fresh and light on hot summer days. The pop of red is stunning and because it comes together in minutes, you’d never imagine something with so few ingredients could deliver so much flavor. But it does!

    If you’re lucky enough to grow your own tomatoes, this is the best cherry tomato salad recipe to use them all up!

    • Cherry Tomatoes: Whether store bought or from the garden, be sure to give them a good wash then slice them in half.
    • Chimichurri Sauce: I love a good homemade easy chimichurri sauce because it’s easy to make and tastes fresher than storebought. If you have a favorite bottle of store-bought sauce, you can certainly use that instead.
    • Olive Oil: Used to coat the tomatoes and help distribute the chimichurri sauce evenly over the tomatoes.
    • Salt & Pepper: A bit of seasoning to taste.

    All you need to do is add all of your ingredients into a large bowl and toss together to combine!

    How to Cut Cherry Tomatoes for Salad

    You’ve probably seen the kitchen hack of placing all the tomatoes on a plate, covering it gently with an upside-down plate, and using a long sharp knife to cut through the center of the two plates. In the end, all of the tomatoes should be cut in half.

    I usually stick to the old-fashioned way and just slice them in half with a knife, one at a time!

    Tips & Suggestions

    • Use ripe tomatoes. Look for bright red tomatoes that are plump, smooth, and wrinkle-free.
    • No cherry tomatoes? We love them for their juiciness and the fact that they explode when you take a bite out of them, but if you don’t love all that juice you can definitely swap with a different kind of tomato.
    • A different dressing. Chimichurri sauce is herbaceous and fresh however it’s not the only dressing you can use. Use your favorite balsamic vinaigrette or lemon dressing. Even a honey Dijon dressing would be delicious.
    • Add cheese. Add bocconcini or fresh mozzarella to the dish. Maybe some feta or goat’s cheese.

    How many people does this recipe serve?

    Depending on how you use it, if you’re enjoying it as a side dish, it can easily serve 4 people. If you’re having a bowl of it as a light meal, it is probably enough for 2 people.

    Can I add some protein?

    Sure! My recommendation would be to add some canned tuna or bang bang chicken on the side. You could also do some cooked shredded chicken.

    What are other types of tomatoes I can use to make tomato salad?

    Even though it won’t be a cherry tomato salad anymore, it’ll definitely be a delicious tomato salad just the same!

    You can use Roma tomatoes cut into quarters, plum tomatoes, grape tomatoes, or even rainbow cherry tomatoes for a variety of colors!

    How long does tomato salad last in the fridge?

    The longer it sits the more the flavors meld into each other so it’s even better the next day! Leftovers will keep fresh in an airtight container for up to 3 days.

    Ways to Use Cherry Tomato Salad

    As mentioned earlier you can use it as a side to grilled New York steak, Oven Baked Bacon Wrapped Shrimp, Chicken Tomato Panzanella, or Baked Salmon with Lemon. Serve it on the side of caramelized onions burgers or hot dogs or on top of leafy greens for a more traditional salad.

    In the morning I like to have it with scrambled eggs or sometimes for a snack I’ll add it on top of a piece of crusty bread and make it similar to Avocado Tomato Bruschetta!

    Ingredients
      

    • 3 cups cherry tomatoes washed and cut in half
    • ¼ cup chimicchuri sauce or to taste, homemade is the best
    • 2 tablespoons extra virgin olive oil
    • salt & pepper to taste

    Instructions
     

    • In a large bowl, combine the halved cherry tomatoes and the chimichurri sauce.
    • Drizzle with extra virgin olive oil and season with salt and pepper to taste.
    • Mix everything together until the tomatoes are well coated in the chimichurri sauce. Serve immediately and enjoy!
