I’m going to show you a foolproof way to cook a New York strip steak on the grill that will result in the juiciest steak with the best flavor!
I use a simple dry rub seasoning and let it sit at room temperature for a few moments to ensure the grill has time to get hot. Then, comes the sizzle for that delicious sear. Whether you’re firing up the grill in the summer or you’re grilling outside in the snow, this is the recipe you’re going to want!
What is a New York Steak?
New York steakhouses popularized the strip steak, which is actually half of a T-bone steak. It’s a beautiful cut of beef that has a nice amount of fat and marbling, and because of its uniform shape, it makes it easy to cook evenly.
The bold flavor of this cut means you don’t need much seasoning at all. It does well with high heat, which is why it’s great for grilling and is always a tender and flavorful choice for steak.
New York Steak Vs. Ribeye
Both cuts are incredibly tender and flavorful, but the ribeye steak wins for the amount of marbling, giving it a slight edge on tenderness. Due to this extra fat and marbling, you’ll find the ribeye is a bit more expensive.
Strip steak is a bit leaner and usually cut a bit thinner, but both are great options.

Recipe Tips
- You can marinate the asparagus earlier on and let it sit while the meat sits. That way it’s ready to grill when the beef comes off the grill.
- Make sure to clean your grill before and after grilling. It helps with preventing any flavors crossing over from other food that was on the grill prior.
- Always add room temperature meat to a hot grill. If it’s cold, it will stick to the grill, and you won’t get a beautiful sear.
- When the grilled strip steak is resting, tenting it helps to keep it warm. Letting it rest allows the juices to settle so the meat stays nice and moist.
- If your asparagus is really thin, you can grill them in an aluminum foil pan so they don’t fall through the grills.
New York Strip Steak Ingredients
Parsley: I like to finish off my New York steak with a garnish of fresh chopped parsley for a pop of color and freshness.
New York steaks: This recipe is for 4 8 oz. strip steaks. Of course you can make as many as you need.
Montreal steak seasoning: I use my homemade blend of Montreal steak spice, but use store-bought if that’s what you have on hand. I have another blend of steak seasoning I make that would also be great.
Asparagus: Washed and trimmed. Remove the woody ends either by snapping them off naturally or cutting off about an inch or two.
Avocado oil: Used to marinate the asparagus so the dry rub coats each spear.
Salt and pepper: To season the asparagus.
How to Grill New York Strip Steak
Step 1: Rub the Montreal steak seasoning all over each steak and let them sit on a plate for 20-30 minutes. This allows the flavors to penetrate and the meat to come to room temperature. In the meantime, wipe your grill with a bit of oil and heat it to high heat.
Step 2: Add the steaks to the grill and let them cook for 3-5 minutes, undisturbed. Flip them over and grill for another 3-5 minutes for medium-rare. Remove the steaks from the grill and set them on a plate. Tent them with a piece of foil while they rest.
Step 3: Marinate the trimmed asparagus in a Ziploc bag. Place them in there with the oil, salt, and pepper. Zip it up and mix well.
Step 4: Place the asparagus on the grill crosswise (so they don’t fall through!) and grill them over high heat for 5-10 minutes, depending on your desired tenderness. Turn them once halfway.
Step 5: Remove the foil from the steaks and garnish with parsley. Serve with grilled asparagus and a side of Instant Pot mashed potatoes. Enjoy!
How Long to Grill Strip Steak
2-inch New York strip steak grill time and 1-inch New York strip steak grill time will differ slightly, but the most important thing is to use a meat thermometer to let you know when the meat is ready to come off the grill.
I cook my steak to medium rare, which takes about 3-5 minutes per side. If you want yours medium, leave it on for about 5-7 minutes or 8-10 minutes for medium-well.
The internal temperature should read:
Rare - 120+125 F
Medium rare - 130-135 F
Medium - 140-145 F
Medium well - 150 F
Recipe FAQs
This usually depends on the thickness of the steak. You want to start off with an open grill so you’re not trapping too much heat and moisture. To get that mouth watering sizzle and the gorgeous char marks, you need the high heat.
If the steak is a bit thicker, you can move the steaks away from the flames, to indirect heat, towards the end of the cooking time, and close the lid. This gives the inside a chance to catch up to the outside.
We love it with mashed potatoes, whether it be classic mashed potatoes or cheesy mashed potatoes with caramelized onions. They’re also great with scalloped potatoes or baked potatoes with rosemary and thyme.
You could also serve it with some jalapeño poppers with cheddar cheese, Instant Pot corn on the cob, or a fresh cucumber tomato salad.

- 32 oz Steak 4 slices of New York Steak
- 1-2 tablespoons Steak Seasoning homemade or store bought steak seasoning
- 1 lb asparagus trimmed
- 1 tablespoon avocado oil
- salt & pepper to taste

How to Grill New York StripSteak
- To prepare New York Strip Steaks for grilling, season with 1-2 tablespoons of Steak Seasoning, let steak marinate in room temperature for 20-30 minutes.

- Grease and preheat grill to high heat. Grill steak for 3-5 minutes, flip on the other side and grill for another 3-5 minutes for medium-rare.
- Grill 5 to 7 minutes on each side for medium or 8 to 10 minutes on each side for medium-well.
- Remove steak from the grill and let rest for 5 minutes under a foil paper.
How to Prep Asparagus for Cooking
- First, wash asparagus in a cold water, and snap off the woody ends by bending it with fingers. It usually snaps easily at the bottom where the woody part begins.
- Next, using a zip bag add 1 lb of asparagus, 1 tablespoon of avocado oil, salt and pepper to taste. Zip and mix well, let marinate until ready for grilling.
- Grill asparagus over high heat for 5-10 minutes, or to desired tenderness, turning on the other side once.
- Garnish New York Strip Steaks with parsley and serve with grilled asparagus & mashed potatoes. Enjoy!
