  • Soy sauce
  • Honey
  • Lime juice 
  • Garlic 
  • Ginger
  • Oil
  • Sriracha
  • Salt + white pepper
  • Cilantro

Step 1: Whisk all of the marinade ingredients together in a small bowl.

Step 2: Pour 3/4 cup of the marinade into a sealed ziploc bag or container. Add the chicken thighs and leave them to marinate in the fridge for 3 to 6 hours, or over night.

Step 1: Now, add the marinated chicken thighs onto a hot grill and grill until the chicken is cooked through, flipping once, also grill any of your favorite veggies like zucchini, bell peppers and broccoli.

Step 2: While the chicken is cooking, make the slurry by combining the reserved marinade with cornstarch. Microwave from 30 seconds to one minute, then brush it over the grilled chicken.

Step 3: Finally, serve the grilled chicken with more marinade if you’d like and chopped cilantro and grilled veggies. Enjoy!

Can I bake the chicken instead?

Of course! Once the chicken thighs are done marinating, arrange them in a baking dish and pour the reserved marinade slurry overtop. Bake in a 425ºF oven, flipping each thigh at least twice throughout. After 20 to 25 minutes, set the oven to broil for 5 minutes to slightly char the outside.

What goes well with honey soy chicken thighs?

Marinated chicken thighs pair well with more Asian-inspired flavors and side dishes. Place the chicken over a bed of fried rice, noodles (or zoodles for a lighter option), coconut rice, mashed potatoes, or your favorite grain. To reheat, place the chicken in the microwave and cook on high for a few minutes. Alternatively, bake the leftovers in a 350ºF oven for 5 to 10 minutes or until warmed through.

Ingredients
  

  • 2-3 lb chicken thighs

Marinade Ingredients

  • 3 tablespoons soy sauce 
  • 3 tablespoons lemon juice or lime juice
  • 5 tablespoons honey
  • 5 cloves garlic minced or grated
  • 1 tablespoon fresh ginger finely chopped
  • 2 tablespoons olive oil or oil of your choice
  • 1-2 tablespoons  Sriracha sauce I use 1 tablespoon
  • 1 teaspoon sea salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons cilantro

Marinade

  • Whisk all marinade ingredients together in a small bowl. Pour half the marinade (about 3/4 cup) into a sealed zipper bag or container and add chicken thighs. Marinate for 3-6 hours in the fridge or over the night.

Grilling

  • Grease the grill with oil, and preheat to high heat. Add chicken thighs and grill for 8-10 minutes, flipping once, or until thermometer reads 160F. Brush with glaze over the chicken and garnish with chopped cilantro. Serve with grilled veggies.

Glaze

  • To make glaze, mix 1/2 teaspoon cornstarch into reserved 1/4 cup marinade and microwave for 30 seconds to 1 minute to make a glaze-like consistency. Brush over grilled chicken.

    Tried it last night. Don’t have Sriracha sauce and cilantro but still came out really GOOD. My husband said it was the best he ever had with chicken. I baked it too not grill. Next time will try with the sauce and cilantro.

  2. Tried this for christmas. Followed the instructions except i marinated the chicken overnight and next day seared the chicken for 30secs each side then slow cooked. Came out bland. Dont slow cook. Might try again and cook on bbq or hot grill instead.

    • Great questions, Ruchita! Yes, the calories are per serving, about 1 – 2 chicken thighs per serving (I use organic chicken thighs, I noticed they are smaller in size).

  6. This sounds sooo yummy!
    I’ve got a couple of probably silly questions. I would be using boneless breast and in the oven. Could it be done the way I would normally cook chicken? At 400°F for 20 to 25 minutes? Or do I need to make some adjustments? It’s just me so grilling is a bit of work for just 1.

    Also, instead of cornstarch, what could be used instead?
